here's 2 great refreshing recipes that is filling and not expensive
CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2
MEXICAN CABBAGE SALAD
1 cabbage, finely sliced
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold

Check out www.foodtv.com and look at Rachel Ray's 30-minute meals. She just had a show about a great low-fat meal. Plus, they'll have other ones too. If you're looking for a site that has many low-fat meals, go to www.epicurious.com and go to the "cooking light" section. You'll find tons of ideas!
I often find that using "regular" recipes and substituing lower fat items (cheese, milk, broth, leaner cuts of meat) helps in lowering the fat and calorie content. I mean, we know by now what is good for us and what isn't, we can easily amend any recipe.

This sounds weird, but everyone I have told loves it....
I can of water packed Tuna
1 tart apple such as Fiji or Mcintosh cut into small cubes
1 baked potato with skin cut into small cubes..
Mix with fat free Wishbone Italian Dressing to taste.
Its quick, easy and great!
I also cube 1 cooked chicken breast, mix it with chopped romain lettuce, banana pepper slices and homemade italian dressing and eat it in a wrap or pita.
(I don't like to make time consuming meals ! )

try to eat boiled stuff like boiled chicken and boiled vegetables or grilled things are not very fattening too and they taste good
