I know they all taste different in some ways, is it the different kinds of peanuts used, or the way it's processed.

All and more I´m afraid. Firstly there are a number of different varieties of peanuts all of which have different flavours and oil and salt contents, the flavour of the peanut butter will presumably be affected. Secondly you have the fact that some companies will roast their peanuts before using them in the peanut butter, or even honey roast them, other companies will steam them. Finally, some brands of peanut butter will just be peanuts, others will have added different quantities of oil, salt, sugar, preservatives and flavourings.
