I always use a little milk. I make these a lot:
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3
Ingredients
2 cups liquid egg substitute (I use a few real eggs instead)
1/2 cup skim milk
1 cup cooked wild rice
1/2 tsp. hot red pepper sauce
1-1/2 tsps. Worcestershire sauce
1 Tbsp. fresh parsley, chopped
Instructions
In a medium bowl, combine all the ingredients, except for the parsley. Beat mixture thoroughly. Coat a large nonstick skillet with cooking spray and place over medium heat until hot. Pour egg mixture into skillet. As eggs begin to cook, gently lift sides of omelet and tilt pan to allow uncooked portions of the egg to flow underneath. Cook until eggs are set but still moist, sprinkle top with chopped parsley and transfer to a serving platter. Serve hot.

You can whip it good with a TINY spash or milk or water. If you add too much the eggs will be runny. I have a friend who is a chef and he adds cheese right to the egg, if you do that he says don't add any other liquid because there is enough in the cheese. Add a little salt & pepper (I use seasoned salt or a little chili powder)
You can fill it with any thing you desire...
My favorite ..... turkey, bacon and cheese

If you want to try something different..
An indian omelet
1 egg beaten with a teaspoon of water,
1 tablespoon of chopped cilantro (coriander leaves)
1 tablespoon of chopped onion (finely chopped)
1/4 teaspoon of green chilli paste
salt and pepper to taste
Mix all together well. Pour carefully into a hot griddle lightly greased. Cook for 1 minute on medium heat on one side and flip carefully. Do the other side for about 30 secs. Enjoy with rotis or Naan

nothing I just beat the eggs, cook in pan for a few minutes and then add my ingredients; onion cheese ham black olives green peppers and mushrooms! An everything omlette!
