What was his nationality?
Sometimes it is customary to belch, depending on where in the world you are from. It simply means the dinner was enjoyable and satisfying. It also implies that the belcher enjoyed the company at his table.
The proper response would have been to simply smile and enjoy his joke with him.

Which cruise did u take? I have been on several, and I havne't heard of a Captain inviting you to his table,, and al the captains I have ever met,, have had the best manners ever! I think they are trained in this infact....
Also, the ship sounded its horn?
But,, to answer your question.
He should of said,"excuse me" and went on w/ the conversation..
Also, you must have this thing for asking questions about "belching"..it seems you have been invited to another dinner where they did the same thing..lol

He probably thought it was funny, and meant it as a joke (although it was in poor taste). Some people think that body noise humor is funny--however, most of them are 8 years old. Consider it one of your "cruise anecdotes" that you tell your friends about.
