Depends what you want.... for technique, speed, feeling and flair then on balance Stevie Ray Vaughan was about the top (beats Hendrix but only just and probably due to the better technology available to him). For pure sensitivity, probably Richard Thompson or Nils Lofgren (massively under rated as a guitarist). For virtuouso technique, there's a guy called Arlen Roth who taught every flash heavy rock guitarist everything they know while still keeping a little for himself. For pure rhythm either Keith Richards or Mike Campbell from Tom Petty's band. For mind numbingly fast strummed chording, the two guitarists from the Wedding Present take a lot of beating. For folk style, Bert Jansch. For indie-rock probably Johnny Marr or Bernard Butler but I have to say.......BILLIE JOE ARMSTRONG?????????? Much as I like Green Day, the guitar technique is... well... primitive.

Well, it's hard to say, but, taking into account various parametres, from inventivity to technique, consistence, etc, the answer just has to be that the greatest "recorded" guitarist probably was Djano Reinhartd. Another serious contender, though unrecorded, is often accepted to be Pagganini.

Jeff Beck is the greatest guitar player of all time. Everybody has their personal favorite of course. I like Jorma Kaukonen, but Jeff is the greatest.
