I do know lots of websites to find them on...the problem is it's difficult to find some that are sure things..
I am having my boyfriends parents over for dinner and I want to make sure everything goes great...
Any specfic recommendations?

A great vegetarian side dish, everybody loves it :

Baked Corn

INGREDIENTS:

2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Not one, there are lot many vegetarian recipes. There are lots of Veg Recipe books available in the Book Shops. You may get even Region wise, South Indian dishes, North Indian dishes etc. I'll tell you how to make vegetable pattice. Take 1/4 kilo each of carrot, cauliflower, potato, beans and any other vegetable you may like. Mainly you buy green peas for this preparation. Cut carrot, cauliflower, beans etc. in to small long pieces and boil it. Boil and Smash the Potatoes thoroughly well. Peel green peas and boil the same. Take a big plate or vessel and put all these boiled vegetables together and make them a big dough, just how you knead it for chappatis. Take in a small plate little bit of Rava. Also keep bread crums ready. Make paste of 2-3 garlic, ginger, kothmir, kadipatta and green chillies with salt to taste. Add this masala paste to the above dough and knead it well. You may put little milk also in the dough. Make your hands little wet by applying a bit of any cooking oil and take a small or big quantity of dough, according to your liking and make a round or triangular ball out of it. Dip that ball of dough in the breadcrumbs and rava powder. While all this preparation is on, you may put required oil of your choice in a big kadai and heat the oil. Once the oil starts boiling, you may put the round or triangular shaped vegetable pattice into the same and roasting it well on the kadai, remove the same and eat it alongwith any chutney or tomato sauce. I hope you will like it. You have thousands of dishes, only with your creativity and interest in preparing, you can make wonders. Try, good luck.

Pane cotto:
2 packages frozen spinach
2 cans great northern white beans
Olive oil
Garlic powder
Salt
Black pepper
Italian Bread

In a large pot (like a "dutch oven" or smaller pasta pot), pour in enough oil to liberally coat the bottom of the pan. Defrost spinach in microwave (about two and half minutes). Heat oil over medium heat and add spinach. Add a pinch of salt, sprinlkle of black pepper, and a good dash of garlic powder. Cook 10 to 15 minutes over medium heat. Drain and rinse beans. Add to spinach. The consistency should be stew-like, if needed add a little more olive oil. Repeat salt, pepper, garlic. Cook another 10 to 15 minutes. TASTE. It should be garlicky, but add to your tastes. Slice up the bread. Portion into bowls. Either serve with bread on the side or chunked into the pane cotto. I like it to sit a minute or two for the bread to soak up some flavor.

I've been vegetarian for years -- and when I want a new recipe I look at allrecipes.com. Check out the reviews, people are really honest and give great tips about how to improve upon the recipes.

Allrecipes has a complete vegetarian collection. They claim they have over 800. I'm not going to count them to verify, however, but I have used many of them and they are quite good. If a recipe has at least 4 stars, it should be very good.

EGG PLANT SALAD
2 medium egg plant in slices
1 lemon
olive oil, garlic, pepper, salt

In the stove put a medium casserole put oil in a plate cover the slices with oil one by one until golden on both side, put them on a dish cover with lemon juice(green lemon) garlic powder, pepper and salt, you can make as many layers as you want.
erve with toasted pita bread in triangles

vegetarian spaggetti,

Use spagettie squash instead of paste~use your favorite sauce and add lots of chunky chopped veggies like mushrooms, onion, peppers, tomatoes, etc....I have served this to meat and potatoe people and they take seconds and don't know its veggies only!

shepherds pie.

1 can green beans
1 can corn
1 can mushroom soup
1 cup potato flakes

mix all contents together and heat. experiment. more or less potato flakes, or substitute lima beans. salt.
