Hard question...The burnt tofu in Hunan is great. Also frog legs and entrails in chile sauce. The smoked baby birds that they eat everywhere in China. Pekinese rat...you wouldn't know unless someone told you that it is rat; at least I didn't know. Thousand year old egg is good. Maybe you would like to chase it down with mao tai, a rice liquor that tastes surprisingly like vomit. No, I liked the vodka in Harbin, where the benzene spilled into the river; it had mandrake, some sort of tree limb and a striped snake in the bottle...BOY that was good. I don't know. I had so much cool food in China, I just can't decide.
Maybe the best was the vegetarian sausage links and vegetarian pork loin in brown sauce that I had outside the monastery with a couple of Buddhist monks. These were made from tofu(the food not the monks) as was the stuffing in the dumplings that we ate with incredible sinus clearing mustard oil!!!!!!!!

Mapo Tofu loaded with lots of Hua Jo and chilli. The flavour lasts for hours.
If you count Uighur food as Chinese (they do live mostly in China) then it would be Langman as you get a bit of variety with every season and every region in which it is prepared.
(for those who don't know the Uighur's invented pasta and passed it on to Italy via Marco Polo. Langman consists of extremely long thick pulled handmade noodles, a little bit of chilli depending on the season and whatever vegetables happens to be growing at the time)
I must stop there as this is whetting my apetite and lunch is still a while off.

Hi: There is a restaurant called Wa Sun.
The owner makes a Coconut Chicken. Sweet and a tangy hot
coconut milk sauce with lightly breaded dark chicken pieces.

My dad grumbles when I order this... but Chicken Chow Mein, hong kong style!
Otherwise, my other favorite chinese dish is cracked crab with ginger and scallions!

nothing better then a Chinese home cook food ( steam fish, nutritious soup, stir fry vegetables, steam chicken and a bowl of hot steam rice)
