Just because you boil it does not mean it is any healthier when we are talking about carb intake. Rice (although not high in fat) is loaded with carbs. Once you consume those carbs they turn into sugar. We all know that sugar is bad for any type of diabetes. With everything moderation is the key. If you want to eat rice you can just eat about 1/2 cup. Then you can eat a serving of meat which is not high in carbs and some veggies. Just remember that all veggies are not the same. Corn, carrots, potatoes and peas are on the list for having high amounts of carbs.

Any white carbohydrates (like white rice, white bread, white pasta) should be avoided because they are processed too quickly into glycose in the body. If you want rice, use brown rice, or whole grain pasta and breads.
All veggies are on diabetic exchange diets. Just be careful with root veggies like potatoes (white carb) and beets. Stick to greens, beans, tomatoes and carrots. If you like salad, that's always a good bet.
Look up the Diabetic Exchange Diet online and it will direct you on many of these questions.
Good luck.

My husband is a diabetic and from experience all starches are not good for a person with diabetes. Therefore, you should not eat rice, potatoes, chips(potatoes), bread, popcorn, corn. If you must eat rice I would suggest brown rice with the serving size of 6 -8 table spoons. The above foods are carbs that breaks down into sugar after digestion, which will cause your sugar level to increase. I suggest you eat green leafy vegetable, such as greens, brocolli, spinach, salads, cabbage, squash, eggplant(delicious) beans and peas

High in carbohydrates? Yes. There are 15g in every 1/3 cup, or about 45g in every cup.
Is it "bad" for a diabetic?
No... my doctors have always told me that you can eat anything with diabetes you ate before you were diagnosed... you just have to take approprate medication (in my case, insulin), for it.
My favorite veggies are broccoli, cucumbers, carrots, sweet (bell) peppers, celery root, and fennel with oil and vinigar, or asparagus (grilled), artichokes (grilled), zuchini (grilled).
Spinach, and other cruciform veggies are supposed to be very good, and there is always that urban myth about celery stalks requiring more calories to chew them than they actually contain.
BTW: I resent being refered to as a "diabetic patient" as if I am under someone else's care. My diabetes is MY responsibilty, not someone else. I AM diabetic.
