Soy milk can and does go bad. It generally has a shelf life of one year but once opened should be used within five days.
The milk that they serve in the field is ultra pasteurized to give it a longer shelf life. It does have a very different taste then normal milk or raw milk.
Though on deployment though they probably use powder milk which can be stored for even longer. If you are in the military just ask one of the cooks where the milk is from.
Soy milk (As stated above) has a sweet faintly nutty taste. It doesn't taste as rich as cow milk does, even when compared to skim milk. The texture is rather kind of watery with a little bit of a fine gritty feel. Perhaps a little more subtle then the texture of pulp free orange juice.
If you are really curious then try a little soy milk yourself. I think it taste really good on cereal.

Soy milk does not taste like regular milk, it has sort of a nutty taste, hard to describe, no way does it taste like real milk! But I love the chocolate soy milk and I recommend you have some several times a week, as well as your regular 2 percent milk. In the fridge, soy milk will last about a week and it is very, very good for you and your heart! It is chock full of all kinds of good things, read the box! For the best chocolate soy milk around, get, (8th Continent)! I use to think the chocolate, (Silk) was wonderful, till I tried, 8th Continent! WOW, is that ever delicious! I drink it hot or cold, either way, it is great!

It gets sour after 2 weeks (more or less).
The taste is different from regular milk, but if you try different brands of soy milk you will notice they taste different, some sweeter, some not. I tried at least 10 until I found my favorite one. Try soy milk with coffee/chocolate or cereals and it will have a similar taste.

soy milk can go sour. I don't think it tates like regular fat free milk. I think it tates better! Yes, you should switch to soy milk. It lasts longer, it is probably healthier. And the cows will like you!

Are you sure it wasn't that shelf stable milk they sell in cartons? They are shelf stable for months and need no refrigeration until opened. In my opinion, soy milk does not taste like cows milk at all and you would be able to tell the differance.

It has an amazingly long shelf life if unopened. Once opened it only lasts a week or two.
There are other non-dairy "milks" that are really delicious. Oat milk, almond milk, hazelnut milk, rice milk... you name it, they milk it.
