Try the mexican cheese called "queso anejo". It"s
crumbly and very flavorful. It does'nt melt and should
be served fresh. Just grate it over the flautas.
That other cheese that is served at alot of restaurants called "Cotija" cheese, smells and tastes like athelete's feet.
No good!!

We usually buy queso fresco. Its very milky and crumbly, perfect for the flautas. If you dont feel like having to crumble the cheese, you can buy pre-crumbled cotija cheese. But the fresher queso fresco is really...really good.

Why are people going to use fresca cheese or mozzarella? I mean that's fine but don't call them flautas. Flautas should have something like cheddar, monterrey jack, goat cheese, or if you want to go European; manchego cheese.

shredded Monterrey jack. allow with guacamole some hot sauce. Delicious just had some today
