Tofu, Lentils, Edamame, some Fruits. Don't fear the Avacado! LOL

Try this refreshing and low-cal recipe....

Avocado salad with strawberry vinaigrette
About 8 servings

1 large head red-leaf or Boston-type lettuce
2 ripe avocados, peeled
1 medium red onion or Vidalia (sweet) onion
2 navel oranges, peeled
1/2 pint fresh strawberries, with stem and leaves removed
1 cup extra-virgin olive oil
2 Tablespoons balsamic vinegar
1/4 teaspoon dried tarragon leaf, crumbled
1/2 teaspoon salt, or to taste
1/4 teaspoon ground pepper, or to taste
1/4 teaspoon sugar or alternative sweetener
1/2 cup fresh berries of your choice


Arrange the lettuce leaves on a serving platter or individual plates. Halve the avocados lengthwise, remove the stone, then cut into thin crosswise slices. Cut the onion into lengthwise halves, then slice thinly crosswise. Slice the orange into thin crosswise slices, removing any seeds if necessary. Arrange the avocado, onion, and orange slices on top of the lettuce. lettuce. Prepare the dressing by combining the strawberries, oil, vinegar, seasonings, and sweetener in a food processor or blender until the strawberries are puréed. Drizzle the dressing over the salad. Garnish with fresh berries.

Variation:

> If you don't care for raw onion, substitute thinly-sliced celery or some fresh mung bean sprouts.

The important thing is to efficiently combine vegetable
source proteins in such a way as to maximize their
effectiveness.
The problem is that protein is made up of 9 critical
amino acids. The absence of any 1 or more, weakens the
effectiveness of the protein. Meat , or more accurately,
animal source, has a complete set of amino acids. Veggys
are absent a few, but not absent the same ones. By
combining certain high protein veggies, each vegetable's
amino acid content compliments the lack in the other.
Vegetables can be grouped into 1 of 3 types in this regard.
1) The legumes: beans, peas, lentils, peanuts
(Note : peanuts are not a true nut, they are legumes,
more closely related to beans)

2) The grains, seeds and nuts: Wheat(and flour,pasta,bread),
barley, oats, sunflower seeds, almonds, walnuts, pecans,
hazel nuts(all nuts)

3) Special category: Rice and corn

Now the trick is to combine at least 1 item each from
at least 2 groups. For example, bread and peanut butter
make up a complete protein since bread is from group 1)
and peanut butter is from group 2). Other good and well known combinations are rice & beans, corn and beans,
mixed nuts with peanuts. Also, if you don't need to be a
pure vegetarian about it, mix a little animal source with
any 1 group and it completes the protein. A lot of beans with a little bit of ground beef, keeps the cholesterol low and stretches the beef. Another hint is that the
cholesterol in eggs comes from the yolk. The white is
almost pure protein, and only 5 calories per gram of
protein, and it completes the protein of the veggys.
If your regimen allows dairy products, non-fat cottage
cheese and yogurt are excellent sources for your
requirements.

Tofu is high protein but it is what you mix with it that adds all the calories. Tofu has no taste really so it takes on the flavor of what you cook or prepare it with. I like to use fresh squeezed garlic to mine for flavor and it is low cal. Look for fresh organic legumes that are not full of salt and junk. They are low and some beans are too.

Non fat dairy, edamame, cheese sticks qiunoa flakes, black beans, and Great Northern beans. All these are less than 100 calories and with the exception of the cheese less that 5 grams of fat.
