Tofu, sometimes also called doufu (often in Chinese recipes) or bean curd (literal translation), is a food of Chinese origin, made by coagulating soy milk, and then pressing the resulting curds into blocks. The making of tofu from soy milk is similar to the technique of making cheese from milk. Wheat gluten, or seitan, in its steamed and fried forms, is often mistakenly called “tofu” in Asian or vegetarian dishes.

Tofu is a great protein source (and calcium too depending on how it is processed). It absorbs flavors very well because its flavor is extremely mild. It comes in many levels of firmness. Silken tofu is the least firm. Even if it the packages states it is "firm" silken tofu, there is nothing firm about it - it is still very wet and smooshy. That is best for making puddings and smoothies or for floating in miso soup. It breaks up too easily to fry.

If you would like to fry tofu, you need to find the kind floating in a little tub of water. That can be pressed between paper towels to get rid of even more water. If you want a chewier texture, you can freeze it and then thaw it and that makes it more "chicken-like".
