Hmmm....there is a dip you can make that's easy. It's just cream cheese and either green or red jalapeno peppers (whatever level of hotness you like). You take both and dump the entire contents and blend them. Bring tortilla chips.
If you want to do something a little more extra than that, maybe hot dog casserole. You take hot dogs (fry 'em). Take a casserole dish, put baked beans on the bottom, place the hot dogs on top, take some canned chili and layer over that, cover the whole thing with shredded cheese.
Or if you are trying to be healthy, just make a vegetable tray and bring different dips.

Stop at the store and get some olives. In one jar you can bring something that often can be genetically traced back to the days of Christ and beyond. It's a wonder they don't keep them in the back with the crystal meth ingredients and the porn.
A dish and little picks for the olives on the side and you have what is a couple thousand years of careful planning, genetically unmolested, and hey, we sacrificed a few trillion tomatoes to distract the genetic engineers from spoiling the unspoiled.
You can't make this stuff up. Have a time with your workmates, and forget the food for a while. They would rather talk to you than eat.

Here's a favorite of mine.. it's quick, easy and cheap.
One bag of mulit-colored pasta spirals
one purple onion
one large tomato
one green bell pepper (two if it's small)
one bottle Zesty Italian dressing
about 1/2 cup shredded Parmesan cheese
Cook your pasta until it's firm, try not to over cook. Drain, then put into an ice bath to cool. Drain and put into a large bowl. Then chop all the veggies, add the cheese, and pour the Italian dressing on as you are mixing. You want to coat everything, but not drown it. Salt and pepper to taste. Makes a great side dish or main course, and it's great for the summer!

Spinach and Ricotta Cheese Balls 10 oz thawed frozen spinach 1 1/2 cup grated parmesan 1 1/2 cup ricotta salt/whitle pepper 1 1/2 cup flour 2 eggs 2 egg yokes Combine all ingredients and refridgerate for 2 hours. Form 1 inch diameter cheese balls. Coat in flour and deep fry at 375 for 3 minutes.

Oyster snackers: 12 pkg of oyster crackers. Mix the following & pour over the crackers: 1 cup vegetable oil; one pkg ranch dressing mix, 1 tablespoon garlic powder, and 3 tablespoons dill weed. Everyone loves these, so bring the recipe.
Or, spread tortillas with chive flavored soft cream cheese, then layer on thin slices of hard salami. Roll up & chill. After 2 hours, slice into one inch pieces. Great pinwheel snack!

Double this recipe for 40 people:
Cole Slaw
Mix in large bowl with leak-proof lid:
2 bags cole slaw
1 bag broccoli slaw
I pkg. cherry tomatoes
Heat:
1 cup cider vinegar
1 cup oil
1 small bottle zesty Italian dressing
1 ½ cups sugar
Stirring constantly to melt sugar, bring to a boil, pour over slaw mixture. Mix well (cover and roll/shake bowl).
Refrigerate over night.
Several hours before serving, flip bowl upside down in fridge. Flip upright and serve.

Fruit salad is always a hit in the summer! Cut up a fresh pineapple, green apples, strawberries, and/or cantaloupe. Add grapes or whatever you like. Pour in a bit of orange juice to keep it from turning brown. Or try a salad with mandarin oranges, raisins, coconut, and mini marshmallows.

My favorite thing to bring to a potluck is a pesto pasta salad. All you need is a packet of Knorr's Sun-Dried Tomato Pesto or Red Bell Pepper Pesto (in the gravy aisle of your local grocery store, cost is 69¢-$1.00); a package of fun & funky pasta noodles ($1.00 if you can buy them on sale); a bag of frozen peas ($1.50 tops); and a container of grated parmesan cheese (the kind you use for spaghetti, $1.00).
Cook half of the noodles, then heat the pesto mix according to directions (all you need is oil and water). Add 1 cup of peas to the pesto mix AFTER it starts to boil. Drain the noodles, cover with the mix & peas, then sprinkle on the cheese. Cover, set aside to cool, then refrigerate overnight. It tastes delicious cold and goes FAST! I love it :)

Chili cheese dip...spread cream cheese in the bottom of a microwaveable dish, top with a can of chili and then shredded cheese and nuke for about 3 minutes...Serve with Tortilla Chips. Easy, cheap and good...(like my men...lol ) ( :

Got a crock pot? Get two packs of those little smokies hot dogs (the cocktail wienie things), a can of beer, and a bottle of BBQ sauce (your choice). Throw it all in the crock pot, stir it a little and heat it on high 4 hours or low for 8 hours. You can finish cooking it at work, just plug in by your desk somewhere. We call 'em "drunken puppies"...don't worry, not alcoholic, the heat will get rid of the beer expect for the flavor...so use a beer that tastes good.
