does any tunisian know which vegetable karshef translates to in english. this vegetable is used for authentic couscous

i am very close to tunisia , here we still make cous cous at home from sameed ,whatever that is in english.
i am sure you mean kharshoof which is artichoke , only in these regions the types of artichoke may not be similar to the types available in the US.
anyway i will ask around about a green tall plant with legs that is used in cous cous and get back to you.
