how come when something is hot the smoke goes up, but when it's really cold the smoke goes down?

I need to write the balanced complete ionic equation for NaAl(OH)2CO3. The only problem is that even though I can do this on a basic level, like if I had to do it for CaCO3 or something, I have NO idea how to divide up the ions for this bigger compound.

Help would be massively appreciated, and I'd love an explanation on how to do it so I can do it myself next time.

I'm aware that the related compound DMSO is a coupling agent. When MSM is dissolved to saturation in water, can it couple both polar and nonpolar liquids? If so, then how would it be expected to compare (as a coupling agent) in comparison with the following coupling agents? Ethanol, DMSO, acetone, glycerine, propylene glycol, and polyethylene glycol -- between which of them would aqueous MSM be rated?
