You may have something on the taskbar set to have big icons, this will make the bar thicker and so it will allow the day to be shown, just like when you manually increase the size of the bar by dragging the edge upwards.

Go to Control Panel, Regional and Language Options.

Choose the Regional Options tab.

Choose Customize, and then the Date tab.

Change the date format from the pull down.

This will change what you see when you mouse over the clock on the taskbar.

On any computer on which I work, the day of the week is only displayed if I hover the cursor over the time. Otherwise, the time, only, is displayed.
