Hi Joel,
O.K. This isn't an easy recipe but it is the best pizza you have ever eaten.
Norm’s Pizza
To make about 10 - 12 pizzas
Dough
2-1/4- Cups Water
2- Tsp Granulated Yeast
1-1/2- Tsp Salt
3- Tbs Vegetable Shortening
2- Beaten Eggs
6- Cups Flour - Will have to add some more
Mix yeast in warm water and let stand for 10 minutes. Add balance of ingredients and work by hand adding extra flour until dough is no longer sticky. Form into ball and let stand at room temp for 1 hour.
Sauce
2- Large Cans Tomato Paste (About 15 Oz Each)
1- 15 Oz Tomato Sauce
1/3- Cup Sugar
4- Tbs Fennel Seed
2- Tsp Salt
1/2- Tsp Black Pepper
Sausage
3- Lb Pork Ground Very Lean – MUST be trimmed of all fat
2- Tbs Fennel Seed
1- Tbs Sugar
1- Tsp Salt
1/4- Tsp Black Pepper
1- Tsp Oregano
Chop any other toppings you may want. (onions, green peppers, mushrooms pepperoni etc.)
Roll out dough as round as you can. Roll very thin, about 1/4". Turn your pizza pan upside down on your dough. Make sure it extends past the pan. With a pizza roller or knife trim the dough by cutting around the pan. Turn the pan right side up, sprinkle with bread crumbs & put the dough on the pan.
With a large spoon put a generous layer of sauce on the dough. Dot very generously with your sausage and then add other toppings you want in any order. When done scatter about 1/3 cup of parmesan on top and spread enough shredded mozzarella & cheddar (1/2 & 1/2) to almost conceal your toppings.
Bake at 475 degrees until cheese is browning well. About 25 minutes or more

here is an amazing homemade pizza recipe
Brick Oven Pizza
for the dough:
1 packet dry yeast
1 cups warm water (milk or apple juice may be substituted)
1 tablespoon sugar
1/3 cup oil
3 cups all purpose flour
2 teaspoons coarse salt
toppings:
8 ounces tomato sauce for each pizza--it may be plain, marinara, seasoned, homemade, or store-bought. If you are using plain sauce, add oregano, basil or Italian seasoning as desired. Crushed red pepper adds a little zing.
8 ounces shredded mozzarella cheese per pizza
thinly sliced vegetables--onions, peppers, mushrooms or eggplant are great
slightly defrosted frozen vegetables like broccholi or spinach, blotted dry
prepare the pizza:
Sprinkle yeast into a large mixing bowl. Add the warm water and sugar. Add the oil, flour and salt. Stir together to combine the ingredients. Knead for 1 to 2 minutes until you have a smooth dough. Divide dough in half and form into a disc.
Preheat oven to 350 degrees. Roll out dough to a 15” circle. Sprinkle a 15" round pizza stone lightly with corn meal or matzo meal. Drape the dough over your rolling pin to transfer dough to baking stone. Spread sauce evenly over dough, up to one inch from the edge. Season with freshly ground pepper and herbs. Sprinkle cheese over the sauce and add vegetables as desired. Bake 25-30 minutes, turning pan once during baking to promote even browning of edges.

Once you get the dough made, you can use any good marinara or pasta sauce, and top w/ any toppings of your choice. Cook meat first. Pepperoni is already cooked.
PIZZA DOUGH
1 (1/4-oz) package instant dry yeast (2 1/4 teaspoons)
2 1/4 to 2 3/4 cups unbleached all-purpose flour plus additional for kneading and dredging
1 cup warm water (105 - 115°F)
1 teaspoon salt
Whisk together yeast, 1 tablespoon flour, and 1/4 cup warm water in a measuring cup and let stand until mixture develops a creamy foam, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
Stir together salt and 1 1/2 cups flour in a large bowl. Add yeast mixture and remaining 3/4 cup warm water and stir until smooth, then stir in another 1/2 cup flour. If dough sticks to your fingers, stir in just enough flour (up to 3/4 cup), a little at a time, to make dough just come away from side of bowl. (This dough may be wetter than other pizza doughs you have made.)
Knead dough on a lightly floured surface with floured hands, lightly reflouring work surface and your hands when dough becomes too sticky, until dough is smooth, soft, and elastic, about 10 minutes. Divide dough in half and form into 2 balls, then generously dust balls all over with flour, cover with bowls or dish towel and let rest 10 minutes. Shape into pizzas, prebake 5-7 minutes at 400ºF.
Dough can be allowed to rise slowly, covered, in the refrigerator for 1 day. Bring to room temperature before using.
Makes 2 (10-inch) pizzas.

The pizza dough is not hard to make. Take a package of dry yeast (like fleischman's) and add to one cup of warm water. Let the yeast fizz up, and rise to the top of the bowl-say 5 minutes. Then add a few cups of flour, all purpose, and mix up the dough and knead it.
Place dough in a bowl with some flour dusted in it. cover with a kitchen towel. Place in warm spot and let sit for one hour-you should see the dough rising.
Knead the dough and put it on the pan-and let it rise again for about half hour. Then it is ready to use.
