I enjoy making a very simplified version of bruschetta. I just toast a white bagel, smother on some mayonnaise, sprinkle some basil and oregano over top. I then sprinkle on some shredded cheddar cheese and melt in the microwave for thirty seconds. Soo good, and soooo easy!

My favorite sandwich is a pounded out very thin, marinated in your favorite marinade, I love a greek or italian one personally.
Grilled chicken breast on grilled sourdough bread with some guacamole mayo (mix mayo *no miracle whip on this one yuck* with guacamole, about half and half with a good dallop of spicy sweet brown mustard mixed in)
Top it with grilled red, yellow and green bell peppers, grilled red onions, and a nice grilled thick tomato slice. Can't bet it! whole meal in one.
