I use a thermometer and put food in at 370-375 since the temp. will drop. That is for tempura and other small pieces.

Grapeseed oil, while is a healthy choice and delicious in salads, does not get hot enough and is too dense to fry anything in tempura batter. Just use canola or vegetable oil or your food will end up soggy.
