I only eat halal food and find many recipes that use wine or etc. What could I use to get the same taste but without the alcohol? Thanks

I am not making any recipe. I have just thought this several times when I was and just wondered was all.

Most often chicken, beef or vegetable stock or more of whatever other liquid the recipe already has can be substituted if it's going to be cooked. For a salad dressing recipe that calls for wine, you could substitute vinegar or lemon or orange juice but might need to adjust some of the other ingredients (ie, it might need more sugar since wine has more sugar than vinegar or lemon juice, etc. but orange juice is already sweet).

There is nothing that is going to give it the same taste but I use chicken stock just for the liquid.

Often you can just use lemon juice, and perhaps a little extra of a rich stock like beef stock to give it extra flavour.

,alcohol is a volatile substance,it boils at a very, very low temperature,when you cook with it ,the alcohol is boiled or burned off,you have no worries

You can get alcohol free wine

You can use natural or unsweetened apple juice with success. If your recipe calls for red wine, then a grape juice is what you will want to use.
You can also use vegetable broth if you want to, but it won't have that flavor that you would probably want.

it depends on what you are trying to make

with desserts there are many 'essences' that replicate the flavour of spirits etc

If you were more specific about the recipes you wanted the substitues for, I could make some suggestions

In savoury dishes, I would think that stock is often fine as a substitute. Let me know if you want further information. Very happy to help.
