Rub it down w/ a blend of salt, pepper, powdered ginger, garlic powder, and a bit of onion powder. Coat all sides.
Place in roasting pan in 400ºF oven for about 40-45 min. Reduce heat to 325º and cook for another hour or so, or until the internal temp is 155ºF. Let rest on counter, covered in foil, for 15-20 min before slicing for juiciest results.

Pork loin doesn't actually need a long time in the oven or it becomes tough so in order to prevent that happening, sear it in a frying pan first and then either cook in some stock or coated in something like marmalade or cranberry sauce or mango chutney which will give you a succulent loin. Cook on 160 - not any higher or you'll have leather. Enjoy!

Apple Glazed Pork Loin (in the slow-cooker)
Ingredients
4 pound pork loin roast, trimmed
1/4 cup apple juice
1 salt, to taste
3 tablespoon brown sugar
1 pepper, to taste
1 teaspoon ginger, ground
6 each apples, quartered
Directions:
Rub roast with salt and pepper. Brown pork roast under broiler to remove excess fat; drain well. Place apple quarters in bottom of crockpot. Place roast on top of apples. Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well. Cover and cook on Low setting for 10 to 12 hours or until done.

INGREDIENTS
3 cloves garlic, minced (optional)
1 tablespoon dried rosemary (Optional
salt and pepper to taste
2 pounds boneless pork loin roast
1/4 cup olive oil
1 cup white wine(optional)
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
Place pork loin into oven for 2 hours, turning and basting with pan liquids. After 2 hours remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.

in crock pot . put sauerkraut in bottom of pot,add pork salt,pepper. turn on high or low setting cook till done . any where from 3 to 5 hours on high or up to 8 hours on low. i will be doing mine this way on new years day. i like Hatfield pork loin and their sauerkraut.

It is a very lean meat and it will be dry if you over cook it.
cook til it reaches 170 at the thickest part...pull from the oven at 160 and let it set it will continue cooking.check after 30 mins and see where you at......
Marinating overnight always adds a lot of flavor.....Italian dressing or Teriyaki depending on taste....dry rubs dont work very well with this type of meat because the cooking time is so short....Good luck
