Pattipan squash are either white or yellow. You start growing pattipans and find out that if you want to get white pattipans then at least one of the parents must be white. Which color is dominant?

White must be dominant.

If white is recessive, then white squash could come from heterozygous yellow parents. Yy x Yy = YY, Yy, yY, yy. So that must not be true.

If white is dominant, then to get a white offspring WW or Ww, at least one of the parents has to have a W allele, and therefore would have been white.

So white is dominant.

I would agree with EcoLink's reply.

Isn't there was an Ever-Green type as well!? oh well.
I don't know their genetics off the top of my head.
But going along with your background info...

Do you want ALL Whites 100% in your population?
or is 50% or 25% O.K.?

If White is dominant. In every 4 offspring
White (Ww) X ww (yellow) cross would yield 2 whites, 2 yellow
White (WW) X ww (yellow), All whites.
White (WW) X WW (white), all whites
White (Ww) X Ww (white), 3 whites, 1 yellow

Yellow (ww) X ww (yellow) -> all yellow
