I am having same problem - am making a homemade pizza tonight with lots and lots of ham on it -
last night i chopped up some ham and cooked it with sausages then chopped the sausages up into small pieces. I then cooked some tomatos (diced - can of tomatoes can also be used) and made a brown onion gravy. Then mixed tomatos, gravy, sausages and ham together and served over some fried rice (can also be served over pasta) - it sounds gross but tastes really yummy and is a cheap and easy meal to make!!!

My fave recipe for leftover cooked meats (nothing with sauces, etc. on them, though) like ham, roast, steak, etc. which you have thrown in the freezer over the past couple of weeks, is to thaw them and then grind them up all together (meat grinder is preferred, but I suppose you could do them in a food processor?) with some onion and salt/pepper. (Haven't got enough leftover meat? Use some keilbossa or smoked sausage.) Then heat thoroughly in a frying pan. Meanwhile, boil some rotini (curly) noodles. Add the cooked noodles to your meat mixture. Voila! DELISH dish!!! Just serve with a salad. (You can always grind the meats as you go along and simply freeze the mixture in ziplock bags for SUPER FAST meals later.)

How about Scalloped Potatoes and Ham? Fix a box of Scalloped potatoes according to the instructions, then add bite-sized pieces of ham before baking. You can top with grated cheese for the last few minutes if you like. Just add a salad and a green veggie, and you have dinner ready!!
You could also make bean soup with ham. Yummy!!

OK Ham - no sandwiches: For the sake of argument we'll say you have 1/2 of the ham left. First I would consider freezing 2/3 for future meals. Slice 1/3 + cube 1/3. We'll get back to this.
The remaining 1/3 I would slice and saute with bacon & eggs & serve with pancakes & butter & syrup or honey & jam.
When you are ready take the 1/3 you have cubed in the freezer: Saute 1 finely chopped onion, 2 chopped carrots, 2 stalks chopped/sliced celery stalks in 2 tablespoons of butter to soften. Add to a pot with 8 cups of water + add 1 1/2 cups dry peas or split peas yellow or green (could use beans on lentils), 2 ham bullion cubes and simmer for 2 hours. Season to taste at this point. Add chopped parsley and serve.
The last sliced ham in the freezer you can make Western Omellets, Switch up eggs with a little water, saute chopped onion, & chopped peppers in pan with a little oil or butter until soft, pour the switched eggs over and add sliced & chopped ham on top and cook over medium heat. Not a sandwich but you might like to add a little buttered toast or roll on the side.

-you can shred it, mix it with homemade bbq sauce and eat it on crackers with cheese like an appitizer.
-mix with eggs, onions and a little cream. pour into a pastry crust and bake (that's a quiche! my favorite for left over ham!)
-you can make pea soup..that's very tastey and the recipe is on the back of every bag of dried peas.
-roll it up with some veggies in a piece of raw chicken, top with cheese and bake till cooked..yum
-you could always freeze it..if wrapped well it will stay for a few weeks..
-i personally would just fry it up in a pan with a little butter and eat it with scrambled eggs and toast w/ jam on the side! :) with a nice cup of tea, that's perfection....

buy a box of scalloped potatoes and make scalloped potatoes and ham. or make potato soup and throw in the ham. omelets, its endless

I keep posting this recipe. Can you tell I'm craving beans?
Red Beans and Rice
a pack of kidney beans
ham (i buy those ham steaks from the grocery and cut it up and put it in, including juice)
one onion (chopped)
1/2 stalk of celery (I just put it in whole for flavor and then take it out later, but you can chop if you want)
1 toe garlic (I don't cut this either because I take it out later, but you can)
2TBS parsley
10 cups of water
Cook in crockpot until it's the desired consistency. Serve by itself or over rice.
If you don't care about fat content, butter is really good in it, too. (Maximum 1 stick.) I don't use it, but it does make them REALLY creamy.

Chop some up and make Ham & Egg thing for Breakfast, whats it called, I forgot, feed some to the cat, make Ham Salad, course thats eat on bread too. Freeze some for later, maybe in a couple of weeks, it will still be good.
