Is there someone out there who knows how to make pork fried rice like the chinese restaurants? I have tried and tried and to no avail, its like they use super secret ingredients that the public doesnt have access to.

shhh.. I know what it is. Dont tell anyone.

It is Oyster sauce. It makes the rice brown. You just get a hot wok and proceed.
Cooked cooled rice
diced scalions
bean sprouts
white pepper
soy sauce
diced pork
finish it with a scrambled egg.

LOL - you know what? There is NO SUCH THING AS A "real recipe" for fried rice. You can make fried rice however you want. The ones you get in the restaurant are very basic and have ingredients put in to show that the rice have been fried and with a little bit of colour (eg peas and carrots and ham). You can put whatever takes your fancy in it according to taste. One hint for successful fried rice - cook the rice the day before to let it dried out a little. ALso.. use fish sauce instead of salt. Well, there are lots of recipes for that one, and it is easy. It is pretty much as listed by the other answerers. Also, the restaurants here in Calif also add bits of beef and chicken as well as the fried pork. I dont use the oyster sauce....because my Hubby is so Allergic to any fish and seafood it could kill him....So I just use Soy Sauce to add the flavor and color to the rice after it is cooked up and all is added cept for the egg that is the last thing....I move the rice from the center of the wok......drizzle the beaten egg into the center, and scramble it up til done, then mix all together....and Serve it up....

precook rice one day ahead,key!
you need a super hot wok,their's is about 150,000 btu's
fry the rice for a bit before adding soya
use peanut and seasame oil[sesame for flavour,peanut for high smokepoint]
keep it simple,they do!
garlic ,ginger,pork,egg,mixed veggies,soya sauce

PORK FRIED RICE

2-3 c. cooked rice
1/2 c. diced boneless pork, fried
2 cloves garlic, minced
1 onion, chopped
2 sm. eggs
butter
1 tbsp. chopped scallions


1. Melt butter and saute onions and garlic.
2. Move onions and garlic to one side and scramble eggs on the other side. When eggs are done, mix together with onions and garlic.

3. Add boiled rice and fried pork. Mix well.

4. Add scallions and serve.
