All the answers I've read so far are good. The reason we only need one sacrifice: We are the children of Adam. Jesus is God entering through Adam's bloodline. Since God became man through Adam's bloodline, He is qualified to represent man by bloodline. He ties God (Heavenly Father) with man's bloodline. This bloodline reverts all the way back to Adam for the tying of all to God and then forward from Adam to all his children. Therefore, one sacrifice was sufficient for the whole human race.

Look, it's real simple. Here's an analogy. Your dad is this Big Shot, OK, and whole bunch of people insult your dad, and by rights he oughta kill em all, but he can forgive them only by having you crucified, which is fair enough, right? So he is kind and has you crucified, which is no joke, believe me. Once you are dead, your dad says to the first guy to insult him, OK, now, if you really believe I killed my son for your sake, I'll forgive you, and while I'm at it, anyone else who made me mad as well, on account of I don't got several billion sons to have slaughtered. So the guy says, whoa, yeah, OK, I'm so sorry I made you mad, but your son's dead now so I feel great cuz it's like I never wronged you now. And everyone else is forgiven too, providing they accept you killed your son, so that's OK.
See? Totally logical.

This is because Jesus life was perfect. It took the place of or redeemed mankind from sin that we inherited from our perfect ancestors Adam and Eve. Because they sinned and did not have any perfect offspring before sinning, a perfect human life was needed to redeem mankind from its sinful state. That is why Jesus had to come in human form and die.

Israelites were made to sacrifce animals and follow a strict law code in the interim before Jesus died. At this time a sacrifice for each person was necessary because the animals was not what was fully needed- a perfect human life.

After Jesus died, he he was the end of the strict Law Covenant because Jesus perfect life was used to redeem mankind (Romans 10:4).

But it doesn't end there. Only those who exercise faith in that ransom will be saved. (John 3:16,17)

Sin passes down through the man's seed. The original sin was done by one man (Adam), therefore the sinless blood of Jesus pays the price for anyone that believes in their heart and confesses with their mouth.Note: a belief in the heart will lead to changes of actions in people's lives.

Jesus is the Lamb of God who takes away the sin of the world. Jesus, a Savior, is God's solution to mankind's problem of sin. Jesus' sacrifice was sufficient to pay for sin and satisfy God's wrath against sinners. So, it's really a both/and thing. On the one hand God did this amazing thing for the whole world but it is applied one person at a time when trust in the Savior becomes a person's moment of faith and search for forgiveness. Take a look at 2 Corinthians 5, Romans 5 and John 3.

For two reasons:
1) According to Paul, "as through one man (Adam), sin entered the world, so through one man (Jesus), sin was removed. N.T. Wright argues that just as through Adam's faithlessness Man was separated from God, it is through one man's faithfulness that Man was re-joined to God.
2) There is no greater sacrifice for Man's pride than God dying for Man. Since Jesus' death was the ulitmate price, there can be no other sacrifice, and multiples of the ultimate sacrifice would be redundant.

Jesus is God. The death of God could atone for the sins of an infinite amount of humans. God literally died, He was murdered. Think about that for a little while.
