some people I know use boilded potatoes and then fry them
Other people slice them right into the pan.
Some fry with onions..some dont.
WHat is the BEST way.
(prefer people from the south..they are better cooks :)

I dont boil mine first, but instead of frying in butter, if i have it i fry them in bacon grease ( if i dont i use butter)..i know artey clogger for sure, but oh how good they taste...I peel them, slice them in think slices, put in a pan with bacon grease, some chopped onion, salt and pepper and fry on low heat so that the insides get done. If you like them crispy fry longer for a crisp, if you do not like them crispy they are ready when the insides are done....try them also sometime with some grated cheddar on top or some old fashioned pan chicken gravy...yummmmmm, thats southern cooking at its best, just ask me and paula deen..

Cottage Fried Potatoes
Start to Finish: 25 minutes

Ingredients
3 tablespoons butter or bacon grease - I personally prefer bacon grease
3 medium potatoes (1 pound), thinly sliced
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 small onion, thinly sliced and separated into rings

Directions
1. In a large skillet melt margarine or butter. (If necessary, add additional margarine during cooking.) Layer potatoes into skillet. Sprinkle with salt, garlic powder, and pepper. Cook, covered, over medium heat for 8 minutes. Add onion rings. Cook, uncovered, for 8 to 10 minutes more or till potatoes are tender and browned, turning frequently.

3. Baked Parmesan Cottage Potatoes: Prepare as above, except arrange potatoes and onion in a thin layer in a greased 15x10x1-inch baking pan. Melt margarine or butter; drizzle over potatoes. Omit salt. Combine garlic powder, pepper, and 1/4 cup grated Parmesan cheese; sprinkle over the potatoes. Bake in a 450 degree oven about 25 minutes or till browned.

Uncle Bill's Fried Potatoes and Onions

4 large russet potatoes or yukon gold potatoes
1 large onion, sliced thin
4 tablespoons butter
1/2 teaspoon granulated garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Peel and slice potatoes about 1/8 inch thick or thinner.
Slice onion thinly.
In a large frying pan on medium-high heat, melt butter.
Add sliced potatoes and onions, cover and fry for 10 minutes, stirring often.
Sprinkle with granulated garlic powder, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; stirring occasionally.
Serve hot with your meal.

Slice them in to a cast iron skillet while melting the butter and oil. I sue about 3/4 stick of butter and a shot of oil (1/8 cup maybe)
Cook them on medium heat and dont stir them.. give them time to brown and cook. Flip them, and do the same.. If the potatos arent tender then put a lid on them for a few minutes on low heat.

salt and pepper them to taste after you slice them in to the skillet. may add onion and peppers at ths time also.

I personally cut my potatoes into small cubes, like if you were going to make potato salad, that small. I cook mine starting from raw in an electric skillet until cooked. I add onions, garlic salt, pepper, and season all for flavor. They are so yummy.

first you cut the potatoes into thin slices but not too thin get some flour an dip the flour on both sides get out a pan and put canola oil on the pan then put the potatoes in the pan after that let them brown on both sides but dont brown for too long when they are done frying add salt

they take less time cooked 1st
but I just slice mine into potato chips and fry in oil till crispy...add onion and gr. pepper if u like

making good fried potatoes requires, bacon fat, a iron skillet and plenty of patience.
