Tabasco is always a source of Creole/Cajun recipes. Here's a classic. You can substitute shrimp for the oysters (which I have done). You might want to start out slow on the Tabasco until you find the taste you want.

1 pound Kalbasa sausage
2 boneless chicken breasts diced 1/2" cubes
1pound frozen okra
1pound frozen corn (CREAMED corn)
1 large onion chopped
1/4 cup flour.... bleached white
6 cups, turkey of chicken broth
2 tablespoons of Louisiana Hot Sauce
1/2 stick butter

2 pounds small peeled shrimp thawed

in large heavy pan........ melt butter
add..... chicken cubes and chopped onion...cook until chicken is coouked, but NOT crispy
add sausage, and the flour......
be sure to stir hard, do not let flour burn or stick

add okra and Creme Style Corn... stir well.... and get to warm.

add chicken stock,,,, and the hot sauce, and let simmer COVERED for at least 3 hours.... very low temperature,
if too watery for you add 1 teaspoon of corn starch 1/2 hour before serving

MAKE sure to stir properly, scrape entire bottom of pan, so not to burn corn or okra.

when serving... put small handful of shrimp (UNCOOKED but thawed) in bowl first, then spoon gumbo over the shrimp, it will cook the shrimp before it gets to the table.

I basically do a stir fry of onions, garlic, and add small chicken pieces. Then add a can of tomatoes, small amount of onion soup mix and cut okra. Add chicken stock or water and simmer until done. I might add shrimp, but like just chicken better.
