Pancake

1 cup maida flour
1 1/2 tsp baking powder
3 tbs sugar
3/4 tsp salt
1 egg
3/4 cup of milk
3 tbs melted butter / ghee

variation 1:
* 1/2 cup of cooked rice (+ an extra 1/2 tsp baking powder, add with with the flour)
variation 2:
* 1/2 cup of paneer / cottage cheese (+ an extra 1/2 tsp of baking powder, add with the flour)

directions
* in medium-sized bowl put flour, baking powder, sugar, salt / mix well
* in a smaller bowl mix the egg + milk
* pour the egg-milk into the flour, make smooth batter
* add the melted butter
* leave it plain if you are making plain pancakes and if you are adding rice or paneer / cottage cheese add it now
* leave the batter for half an hour

** heat a skillet, put little oil, make small pancakes of 1/4 cup of batter for each, leave enough room between each
** keep the ones you finish on a warm plate in a 200*F oven or on a plate over a pan of hot water (not on stove), cover with a towel

P.S. Do you have a Tomato Saar or a Tomato Subgee or another vegetable sauce to serve over any one of them........or do you have some sort of sweet sauce to serve over them..... something Indian or Asian that you think would be nice with them?

How about Mango Sauce as well as Tomato Topping?

MANGO SAUCE
1/2 cup mango pulp
1/2 cup water
2 Tbsp sugar
2 Tbsp melted butter/ghee
Few leaves of coriander

1 - Blend the sugar and water into the mango pulp
2 - Heat the butter, add the mango mixture and stir till warm.
Add more water if you want a thinner sauce.

Serve warm or cool over pancakes (or ice cream!).
Top with coriander leaves.


TOMATO TOPPING
1 med. can (12 oz or so) crushed tomatoes
1/4 cup coriander leaves
1/4 cup water
1 Tbsp onion, chopped (optional)
2 Tbsp butter/ghee
1 tsp mustard seed
Salt (optional) to taste

1 - Heat the butter, add mustard seed and cover till they pop.
2 - Reduce heat, add the onion and cook till clear.
3 - Add tomatoes and coriander leaves, stir till heated.
4 - Add water as necessary to thin sauce.

Serve warm over pancakes.

I like pancakes with corn in them and a dollup of applesauce on top.

edit: WOW, you two are serious about your pancakes !!! If either of you tell me you also like cooking them over a campfire, I will start drooling into my keyboard.
