I am trying to think of something to cook for dinner tonight. I have a pack of boneless skinless chicken breasts. Any ideas? Last night I made lemon pepper chicken and mashed potatoes. I am a bit broke still since Christmas and am wanting some suggestions with items people normally have stocked (I don't want to have to go to the grocery store).

If you got some stove top and a can of cream of mushroom soup or cream of chicken, sour cream and some basic veggies likes onions and celery and mushrooms, peppers are also an option do this.

Dice up the veggies and saute until onions are transparent.
Let cool, combine diced chicken, veggies, and the can of soup and the sourcream toss in a casserole dish and top with moistened stove top stuffing.

Cook for 45mins 1hr 350 degrees until chicken is cooked let cool 5mins and enjoy. 2 breasts good for a couple of people more people more ingredients.

Preheat a skillet and when it`s heated add a vinegar based salad dressing to the pan and immediately add the chicken.The dressing will reduce and the chicken will be great.You can make a side of veggies,and rice,or if you have stuff to make a salad,serve it sliced over the top with some bread.You could also do them in foil packets in the oven.You take a breast and put it on top of the foil and add a few tbs.of pasta sauce,Italian seasoning and maybe some cheese if you have it.Bake at 350 for about 40 minutes.Make sure they are well sealed in the foil,then place them in a casserole dish or on a sheet pan before baking them.You could also,just saute them in a little hot oil until they are browned with seasoning of choice.You can make cream of chicken soup which is very easy.All you do is brown the breasts,then make a roux in the same pan,then add about two cups of milk,and let it thicken,cube the chicken up,add salt,pepper,add a bag of mixed veggies,add cubed chicken back to the pan let cook 10 more minutes.Hope I helped!!

*********CHICKEN CACCIATORE WITH NOODLES
1/4 c. oil
1 - 3 lb. chicken, cut up/boneless chicken breast
2 pt. jars Spaghetti sauce
1 tsp. pepper
1 clove minced garlic
12 oz. pkg. noodles
Parmesan cheese
Grated cheese
Heat oil in skillet. Brown chicken on all sides. Combine salt, pepper, sauce and garlic; pour over chicken. Simmer covered 25 minutes or until tender. About 10 minutes before chicken is done, cook noodles according to package. Drain. Arrange chicken on noodles. Sprinkle cheese over all. Serves 4 to 6.

*******CHICKEN DORITO SURPRISE
1 bag Doritos
1 (16 oz.) Cheddar cheese, grated
4-5 boneless chicken breasts, cooked
1 can cream of chicken soup
1 can diced Rotel tomatoes
Combine in food processor: Cream of chicken soup, Rotel, 2/3 cup grated cheese and chicken. Line cake pan with layer of Doritos, then spread mixture on top of Doritos. Layer with Doritos again and top with cheese.
Cover and bake for 30 minutes at 350 degrees. Then uncover and bake for 10 minutes more. Serve with guacamole and sour cream.

******Ranch Chicken Breasts Recipes

1/2 cup ranch salad dressing
1 tablespoon flour
4 boneless skinless chicken breast halves
1/4 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese


Combine dressing with flour in a shallow bowl. Coat each chicken breast with dressing mixture. Place on ungreased baking pan. Combine Cheddar and Parmesan cheeses; sprinkle on chicken. Bake at 375°F. for 25 minutes or until chicken is no longer pink in center and juices run clear.

How about a chicken Marsala with a rice cooked in chicken broth. Or noodles with butter and parsley. Grilled aparagus would be good, too or maybe green beans cooked with bacon and pine nuts.

Kung Pao Chicken

1 lb boneless skinless chicken breasts, cut into 1 inch pieces
1 tablespoon cornstarch
2 teaspoons light sesame oil or vegetable oil
3 tablespoons green onions, chopped with tops
2 garlic cloves, minced
1/4-1 1/2 teaspoon crushed red pepper flakes (to your own taste)
1/2 teaspoon powdered ginger (can use fresh grated if preferred)
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
1/3 cup dry roasted peanuts
4 cups cooked rice, hot

Combine chicken and cornstarch in small bowl.
Toss to coat.
Heat oil in large non-stick skillet or wok on medium heat.
Add chicken.
Stir fry 5- 7 minutes or until no longer pink in center.
Remove from heat.
Add onions, garlic, red pepper and ginger to skillet.
Stir fry 15 seconds.
Remove from heat.
Combine vinegar, soy sauce and sugar in small bowl.
Stir well.
Add to skillet.
Return chicken to skillet.
Stir until chicken is well coated.
Stir in nuts.
Heat thoroughly, stirring occasionally.
Serve over hot rice.


Sesame Chicken

6 boneless skinless chicken breasts
1/4 cup honey
1/4 cup soy sauce
1/2 cup water
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds

Cut chicken breast into 1 inch strips.
Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
Cook chicken strips for about 6 minutes until no longer pink.
Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
Whisk until no corn starch lumps appear.
Pour sauce mixture into skillet with chicken.
Cook until sauce thickens slightly.
You can add more water if sauce is too thick.
Sprinkle with sesame seeds.
Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.

Do garlic herb chicken tonight. Not sure what you have in stock, but if you have potatoes still, just boil them with salt, pepper and butter. Or make corn or beans. Whatever veggy you have. You could cut the chicken in strips and bread them and fry them up.
