I was hoping they would start on it and have it done soon, but its been there for a week and one day and they still never got an estimate on it. Should I pull it out and take it to another body shop?

I called them, they promiced to have the estimate done and the car started last Friday, I called them Monday and they said they never started the estimate and they were busy and backed up

Yes. That's WAY too long. That body shop should have something in writing to you by day TWO.

Shop was probably closed for Christmas and now New Years.

The good shops are also very busy and may be a little backed up. The holiday's don't help.

Have you spoken to the shop and asked them what's going on?

Is this a shop you chose, or one the insurance had it towed to? What were you told when it went it?

Bottom line, it's your car and you are the ultimate deciding factor. If you think it's too long, have it towed somewhere else, but before you make any decisions, I suggest you talk with your agent first, since changing shops may slow down or stop any settlement in the works.

Hmmm, what's happened in the last week? Maybe Christmas? They probably only worked a couple of days last week. You are free to take the car to another shop, if you don't mind paying a towing fee.
