i wanna make it tonight for new years eve!

I'm sure you'll get lots of responses to this. Here's my recipe:

Potato Salad

Potatoes
1/4 - 1/2 cup chopped gr. pepper
1/4 - 1/2 cup chopped celery (finely cut up some of the leaves too)
med. - lg. grated onion
chopped, fresh parsley (flat-leafed [Italian] has the most flavor)
grated carrot
few tsp. sweet pickle relish
grated or finely chopped hard boiled eggs (2-3)
mayonnaise (NOT Miracle Whip!!!)
salt & pepper

(I prefer to peel my potatoes before boiling. I know some prefer the other way around.)

I have found that Idaho potatoes work well, but others will do.

Peel, wash in cold water, rinsing 3-4 times, and place potatoes in large pot and cover with cold water. I only cut the potatoes at most in half depending on the size.

Cover pot & bring to a boil. Once boiling lower heat to simmer until potatoes are tender. Check frequently as you don’t want them to overcook, which won’t work well for the salad.

Put potatoes in large strainer to drain the water & and briefly run some cold water over them to stop the cooking and for ease in handling. Just briefly though, as it’s important that you make your potato salad while potatoes are still warm as this enhances the flavor through the salad.

Cut up potatoes to desired size and put in a large bowl. Add all ingredients but the mayonnaise. I prefer my eggs grated rather than in chunks. Some people don’t care for the texture of egg whites, and I’ve found (by trying both ways) that the salad is much more flavorful with the eggs grated. Add the mayo a little at a time, carefully mixing all with a wooden spoon, being careful not to mush the potatoes. Add salt & pepper to taste. Chill for a few hours and enjoy!!

Mrs. B's Traditional Homemade Potato Salad

5 lbs new potatoes (peeled, boiled in salted water)
1 large onion (grated)
2 stalks celery (finely chopped)
1/4 cup vegetable oil
1 cup mayonnaise
1 (6 ounce) can evaporated milk
2 tablespoons white vinegar
salt and pepper

Boil potatoes, drain and slice or quarter to liking.
In a large mixing bowl, place potatoes and add grated onion.
Add mayo, oil, milk, vinegar and toss over potatoes coating well.
Salt and pepper to taste and refridgerate overnight.
Arrange lettuce on serving platter and mound on the salad and serve!

I ike Dave's recipe except I use one bunch of green onions, 1/2 tops plus the bottoms, 1 tablespoons Colemans dry mustard and I to 1 1/2 regular French's mustard. Cubed potatoes boil up in about 15 to 20 minutes. Boil at just above a simmer as rapid boiling puts too much water into the potatoes.

Things you need-
potatoes
onions, chopped
celery, chopped
miracle whip
black pepper
green peppers, chopped
eggs, hard boiled
sweet pickle relish
sour cream, light
wash your potatoes under running water, boil potatoes inside their skins, for at least 30 minutes then drain off water. Let potatoes cool peel and cut potatoes into bite size pieces.In a large bowl add potatoes, with all your other ingredients and fold all ingredients together with a spoon. I love mine! EASY!

I chop up;
1. about three COLD Vlasic Dill Pickles--I LOVE CRUNCH!!
2.Half a red onion
(rarely do I add egg--sometimes 2 or 3 boiled ones)
3. 4 or 5 medium potatoes ---ONLY boiled to the point where a fork breaks a potato in half when you poke it-- I add the onions to the potatoes while they are cooling down. I add
31/2. almost a whole stick of butter or Squeeze Parkay.
IT IS WHAT MAKES THE P SALAD SO GOOD!!!
TOTALLY wait till your potatoes cool down before you stir in the ingredients, or you will have MASHED POTATO SALAD,........rrrrrrrrrrrrrrrrrrrrrrrrrr
4. mayo (Hellmann's)
5. mustard--I like the yellow AND the tart,...
6. salt--to suit your tastebuds

German Potato Salad...

This is one of my favourites! Yummy!

INGREDIENTS
4 potatoes
4 slices bacon
1 tablespoon all-purpose flour
2 tablespoons white sugar
1/3 cup water
1/4 cup white wine vinegar
1/2 cup chopped green onions
salt and pepper to taste

DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool and chop.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon fat.
Add the flour, sugar, water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick.
Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm.

*********TEXAS COUNTRY POTATO SALAD


4 c. cubed cooked potatoes
1 c. chopped celery
3 chopped hard cooked eggs
½ cup. Chopped red onion
¼ cup. dill pickle relish
2 tbsp. chopped parsley
2 tbsp. chopped pimento

Dressing:
1 qt. Miracle Whip
1/2 c. sugar
1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)


Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.

Dominican style potatoe salad. very easy!

Bag of potatoes
mayo
1 carrot
eggs (depends on how much your making, about 8 eggs to one bag of potatoes, I usually put a lot bc I love em!)
vinegar

Peel potatoes, boil in salt water, boil the eggs with the potatoes. When eggs are done take them out so they cool off then peel and cut in fours.

You can also add the carrot so it boils with it too, dont have to chop it up just Grate it once it cooked for a bit.

(dont overboil potatoes too much)
when potatoes are done take them out and drain. Immediately mash them add mayo ( add to taste), grated carrots, eggs and mix itall together. add just a capful of vinegar ( just a tad bit).

Thats all! Just add mayo to taste as you go, it will taste fab!

My recipe is not exact measurements. But I peel and cube my potatoes. Cover with water and put a few eggs in with them.. Boil until potatoes are done. Drain and peel the eggs and dice them, add some mayo, mustard and sweet pickle cubes, Salt and pepper. Sorry for not having exact measurements. But I just add until it tastes good.

I love mine

cut up little red potatoes into bite sized pieces (just wash, don't peel them)
boil in water till soft- then run under cold water to chill
once chilled I add: chopped onion, chopped celery, chopped green pepper, mayo and Miracle whip (about half and half, just do it by spoon-full at first to get to the consistency you want) and a LITTLE mustard, salt and pepper then last I mix in about 4 sliced hard boiled eggs
