Olive oil yes, although it might change the flavor (extra LIGHT olive oil won't ... extra VIRGIN olive oil might). Butter not so much ... it has solid fats that'll change the consistency. Seriously, try applesauce. :)

Yes, use olive oil. The taste will not be noticeable. I have used it many times in baking sweets.

Knock on a neighbor's door and ask to borrow some. Most people don't mind sharing something like that (sugar, egg, oil...no big deal)

i had to use olive oil once before in a jam and the cake came out fine, it was a little dense, but not so bad that it had to thrown out. i had made t for a family gathering and everybody loved it.

NO OLIVE OIL in the cake!!!!
Melt butter for it, skim off the foam and measure. 1 stick will yield a 1/2 cup of oil.
