I haven't cut out a biscuit in over 20 years. I just pull off a wad of the dough, quickly shape it in my hand and lay it in my biscuit pan. The biscuits should be just touching.
Don't be fussy about shaping the biscuits. You don't want to overwork the dough.
The food police haven't come to my door yet. I don't miss rolling or patting out the dough. I'm happy with the result.

Terri D wins ... "Don't be fussy about shaping the biscuits. You don't want to overwork the dough."
Who cares how perfectly round the biscuits are? Just pinch off dough in approximately the same size, pat them a time or two (more so you can get them all to fit on the baking sheet than anything) and cook.
I found more tips online referring to how to handle the dough right than about how to cut them to shape. :)

That notion was probably started by someone selling biscuit cutters.

You need a good sharp cutter! The cleaner the cut, the better the rise.

Actually, a cup won't trap in air pockets but it will "seal" the edges (since it's so blunt a cutting tool) so the biscuit cannot fully rise with flakey layers. If you don't have a biscuit cutter a (metal) cookie cutter works pretty well too, just try to avoid cups!
