SEVEN LAYER MEXICAN DIP
1 can refried beans
8 oz guacamole
8 oz sour cream
taco seasoning mix
1 jar pace picante sauce
1 pkg shredded colby and montery jack cheese
black olives
tomatoes
jalapenos
put beans at bottom of pan.layer guacamole on top of beans.mix sour cream and taco seasoningand put on top of guacamole.layer picante sauce cheese olives tomatoes and jalapenos in that order.

Chile con queso: It is made by melting a package of Velveeta cheese with a can of Ro-Tel tomatoes-and-jalapenos. It is a total Tex-Mex thing, totally calorific and always a hit at parties. You have to use Velveeta to make chile con queso, a Tex-Mex dish that's vaguely descended from a real Mexican dish known as queso fundido. Queso fundido is made from a white mozzarella-like cheese but it's just not the same thing; what you want is to do the Velveeta thing.

Chili Cheese Dip..
INGREDIENTS
2 (8 ounce) packages cream cheese, softened
1 (15 ounce) can chili without beans
16 ounces shredded Cheddar cheese
1 (13.5 ounce) package nacho-flavor tortilla chips
DIRECTIONS
Spread cream cheese on the bottom of a microwave-safe dish. Spread a layer of chili over the cream cheese. Finish with a layer of shredded cheddar cheese. Microwave for 5 minutes or until the cheese melts. Serve with spicy nacho tortilla chips.

Swiss Cheese Bacon Smoked Almond Dip
10 slices bacon
8 ounces cream cheese, Softened
1/2 cup mayonnaise
2 teaspoons dijon-style mustard
1 1/2 cups swiss cheese, Shredded
4 green onions, Chopped
1/2 cup smoked almonds, Chopped
Fry the bacon. Let drain and crumble.
Mix all ingreients. Bake in 350 degree preheated oven for about 15 minutes; until golden and bubbly. Top with some crushed almonds.
For a twist, put the cold dip in pre-packaged phyllo cups and bake for about 15 minutes.

This is a really good Garlic Cheese Spread
6 ounces Chez whiz
8 ounces cream cheese, softened
1/2 cup mayo
1/2 cup butter, softened
1 teaspoon garlic powder
Mix all ingredients and refrigerate.

My favorite, and the easiest I've ever made is one regular size box of Velveeta (the medium size one), plus one can of Rotel, microwave and mix. Perfect! If you don't have Rotel, or can't find it, salsa and a little milk or water mixed into the Velveeta will work too. I often do this since Hubby likes salsa with his chips and I prefer cheese dip. I steal a little of his salsa and add it to my velveeta - microwave until it's the consistancy I like.

well u'll need mexican style velveeta, 2 cans of rotel and some spicy sausage. start melting the velveeta in a slow cooker, or crockpot. while doing that, cook the sausage and drain it. then add the rotel and sausage to the cheese. once all the cheese is melted, u'll have a kick a** cheese dip!! yum!

*********MEXICAN CHEESE DIP
1 lg. box Velveeta cheese
1 can Ro-Tel with diced chilies
1 lb. mild or hot sausage
Cook sausage. Drain well. Cube cheese and place in slow cooker. Pour in can of Ro-Tel and drained sausage. Stir occasionally until all melted.
********EASY CHEESE CLAM DIP
2 (8 oz.) pkgs. cream cheese
2 bunches green onions
2 sm. cans chopped clams
1 tbsp. lemon juice
1 loaf round bread
1 box dipping chips
Warm cream cheese to room temperature. Add onions, clams and lemon juice. Mix well.
Cut top off of loaf, hollow out center, set aside extra bread to be used for dipping. Fill loaf with cream cheese mixture. Wrap in foil. Heat at 350 degrees for 1 hour. Break bread into chunks and use for dipping along with chips.
