Quick Coconut Cream Pie

2/3 cup sugar
1/3 cup flour
2 cups milk
2 egg yolks
1 cup coconut
1 teaspoon vanilla
1 teaspoon butter
1 prepared pie crust
1 (8 ounce) container Cool Whip

In medium saucepan mix flour,sugar,milk,and egg yolks.
Cook and stir until mixture comes to a boil.
Boil for 1 minute.
Remove from heat and add coconut, vanilla, and butter.
Pour into crust.
Cover with plastic wrap and refrigerate for 3 hours.
Top with Cool Whip.

The easiest way is bake a ready made pie crust according to directions on the package. Buy Jello cook and serve vanilla pudding or coconut pudding prepare according to the directions on the box (for pie filling). Stir in 1 1/2 cups flaked coconut and pour into cooled pie crust. Beat 3 egg white till stiff, slowly add 1/2 sugar. Spread on pie and sprinkle about 1/2 cup of coconut on top, put on cookie sheet and bake @375 till slightly browned. Good luck.

INGREDIENTS
3 cups half-and-half
2 eggs
3/4 cup white sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
1 cup flaked coconut, toasted
1 teaspoon vanilla extract
1 (9 inch) pie shell, baked
1 cup frozen whipped topping, thawed

DIRECTIONS
In a medium saucepan, combine half-and-half, eggs, sugar, flour and salt. Bring to a boil over low heat, stirring constantly. Remove from heat, and stir in 3/4 cup of the coconut and the vanilla extract. Pour into pie shell and chill 2 to 4 hours, or until firm.
Top with whipped topping, and with remaining 1/4 cup of coconut.
Note: To toast coconut, spread it in an ungreased pan and bake in a 350 degree F (175 degrees C) oven for 5 to 7 minutes, or until golden brown, stirring occasionally.

I bought a frozen Sara Lee coconut custard pie and baked it, it was delicious....it took alomost two hours to bake, but it was worth it.
