It's New Year's Eve and we are having steak and scallops. Before I go to the grocery store during my lunch hour - yes, some of us still work on New Year's Eve - I figured I would think about what to make with it. I have no idea.

So, what are some suggestions on what to serve with a beef-and-seafood dinner? Recipes are welcome, as are appetizers. Thanks!

Steamed asparagus and light tossed salad. No potatoes, too heavy with the beef when it's New Year's Eve and you have a long night ahead of you.

Will depend on the context really. Which is better as a snack - fruits for me personally. It's tastier and gives you that little of sweetness. Which can be better as a snack if you are trying hard to slice back on sugar and lose weight vegetables

Creamy Green Beans and Pasta

Ingredients
8 oz. fresh green beans cut into 1-inch pieces, or one 9-oz. pkg. frozen cut green beans
6 oz. packaged dried bow-tie pasta, multicolored elbow macaroni, or gemelli pasta
1 C. sliced fresh mushrooms (such as shiitake, crimini, brown, or button)
1/4 C. sliced green onion
1 8-oz. carton plain low-fat yogurt
2 Tbs. all-purpose flour
2 tsp. prepared mustard
1/8 tsp. ground nutmeg
1/8 tsp. pepper
1/4 C. finely chopped cooked pancetta or ham (2 oz.)
1/4 C. grated Parmesan cheese
Directions
If using fresh green beans, cook in a covered saucepan in a small amount of boiling water for 20 to 25 minutes or until crisp-tender. Drain. Meanwhile, in a large saucepan cook pasta according to package directions, adding the mushrooms, frozen green beans (if using), and green onion during the last 4 to 5 minutes of cooking. Drain pasta and vegetables in a colander. Set pasta mixture aside. For sauce, in the same large saucepan stir together yogurt, flour, mustard, nutmeg, and pepper. Cook and stir until thickened and bubbly. Stir in pasta mixture, cooked fresh green beans (if using), and pancetta or ham. Heat through. To serve, sprinkle with Parmesan cheese.

********Marmalade Meat Balls

Ingredients
2 pounds fully cooked frozen meatballs
1 bottle (16-ounce) Catalina salad dressing
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes=1/4 cup

Instructions
Place frozen meatballs in the insert of a slow cooker. In a bowl, stir
to combine the remaining ingredients. Pour over meatballs and stir to coat. Cook on high setting for
2 to 3 hours.

Another idea is a big batch of sauteed mushrooms (maybe try some wild mushrooms), to go with the steak at least...

or some kind of risotto would be fab- here's a recipe for risotto w/peas & green onions (that would be a nice complement) http://www.epicurious.com/recipes/food/views/15544, or mushroom risotto is always fantastic.
