I have two knives I can't cook without. Both J.A. Henckels four star- a chef's and paring knife. I've had them about 20 years. Henckels replaced the paring knife with no questions asked when I stupidly snapped the blade carving something that wasn't even food. I bought mine in a kitchen supply- type store when I had a dollars off coupon for any purchase. The four star series is part of their premium brand- good for home cooks, but not as expensive as some of their other premium line.

I have had a Wustof Trident (Solingen, Germany) 8" chef's knife for the last 30 years. I highly recommend it and make sure you have it professionally sharpened (unless you have mastered the sharpening steel).
Try a cheaper version of the chef's knife before you spend the money on a top of the line knife. Go to Walmart and buy a Wiltshire chef knife and see how you like it. Watch the cooking shows on tv and see how the chefs use this knife. You can learn alot - they don't call it a "chef's knife" for nothing. You can use it for just about any cutting, slicing, smashing job you can think of.

Cutco knives are really nice and have the most comfortable handles, too. They come in all sorts of different sizes, and cut almost anything very easily.

I with Ron, I was going to suggest a santoku knife myself. Just don't get a cheap one. Mine is a Wusthof.
