It is absolutely the best!
A real Red Velvet cake is made with cocoa and buttermilk and butter. It is very tender and moist. It has cream cheese frosting made with real butter and broken pecans pieces.
As others have said a large bottle of red food coloring is added to give it its distinctive red color. It is traditional in many Southern households at Christmas because of the lovely color.

It's supposed to be a lighter chocolate cake, but most versions today don't even contain chocolate. Red coloring is added to give it it's distinctive red or red-brown color. To me, the flavor is between that of pound cake and chocolate cake (minus a lot of sugar). I'd give it a 5 because it's not bad, but also not very good. The red color is pretty, and without it the cake would get a 4.

I make mine with 6 large tablespoons of Nestles Quick. and two bottles of red food coloring, therefore it tastes like a homemade, chocolate cake. It is very moist and rich tasting. I use a butter cream icing for it, made from butter, cream, and sugar. Also, very rich. I have also heard of it being made with almond extract instead of chocolate. Depends on your personal taste. My family and I all rate it a 10 if 10 is best and 1 is not so good.

Red Velvet cake taste just like a dark rich chocolate cake. Not any taste of red food coloring................ rating it about a 9. I would rather have German Chocolate cake

My wife just made Red Velvet cake for the Twins (girls) Birthday- it has like a cream, cheese cream topping,with marsh mellow included in the topping, reddish in color and taste somewhat like a dreamy buttermilk cake with cocoa and food coloring to make it reddish in color - it taste absolutely fabulous!! One of the daughters brought us some cupcakes from the Real Deal in Los Angeles - my wife got the recipe from Paula Dean's website - rate it 10+.......Their birthday was the 28th of December, so I still have about 1/2 of it left, lucky me!!

It should taste a little chocolatey, usually red wine vinegar is used so your recipe may be different tasting. As long as it doesn't taste gross then I think you are ok.

True Red velvet cake uses both cocoa and beet juice(not food coloring) and has cream cheese icing. The cake itself will be slightly tart and sweet. I love it!
