Christianity is a composite of many beliefs, bound under one heading. So a reference to "he" is non specific and will allow for a smoother conversation.
As an example "I think he will be a great president".
For me "he" means one thing for you perhaps another. But "we", can agree that "he", will make a great president.
Additionally its Proper English to assume the masculine when the gender is not known.

Because he is easiest to type he rather than he/she or (s)he.
I accept that it is a big problem and wish we had in English a pronoun to use.
Most religions focus on the male because they came into being in a patriarchal society when women were treated as property. You might judge that for their time both Judaism and Christianity were relatively enlightened.
Today the battle goes on. The Church of England now has women priests but sadly it doesn't yet have women bishops

it might be because women were always seen as inferior by Christianity we didn`t actually have a soul until something like the 17th or 18th century when men decided we could have one .so God had to be male

I refer to her as
he: on even weekdays
she/he/it on sundays in the months that have an R in their name
she: on all other days.
Except on the days I say he/she/it does not exist

It is the English language. When gender is unknown, it is a "He". Since spirit creatures have no gender, no male or female, and you don't refer to God as an "IT", God is a "He".
