Cheese Spread Recipe
1 cup mayo
1 cup cheddar or swiss cheese - grated
1 small onion chopped
1 tbsp. butter
1 clove garlic minced
1 tbsp. cayenne pepper
1/2 tsp. dijon (opt)
1/2 tsp. worchestershire (opt)

Preheat over 350 degrees. Saute onion in butter until translucent. Add remaining ingredients. Mix Well. Bake in small baking dish for 20 minutes.
Serve hot with crackers and baquette.

Crab Pizza. Spread an 8oz package of cream cheese onto a plate (like buttering a piece of bread). Cover with cocktail sauce (I prefer Heinz brand) then sprinkle with a small can of drained crabmeat. Serve with assorted crackers and a couple knives.

This is the cheese ball I made for tonight:

8 ounces of Philly cream cheese
1/2 tbsp of garlic powder
1 1/2 tbsp of Worcestershire
2 green onions chopped fine
1/8 cup of blue cheese, such as Danish blue, crumbled

Mix all together until well combined.

On a cutting board, finely chop 1/2 cup walnuts fine, then put the mixture on top in a single mound. Roll around in the walnuts, shaping into a ball as best as you can. Wash hands well, then get a piece of cling film, and wrap around the cheese ball. You can then shape into a more perfect ball. Chill for at least 8 hours. The longer it sits, the better it tastes. Before serving, you may need to roll in more walnuts to make it look better.

Boursin Cheese Spread

16 oz. cream cheese, softened
1/2 cup sour cream
1/2 tsp. basil
1/4 tsp. rosemary
1/4 tsp. thyme
1/4 tsp. tarragon
1/4 tsp. sage
1 clove garlic, mashed

Mix all ingredients together.
Shape in plastic wrap into flattened round ball. Sprinkle with coarse cracked pepper on all sides. Chill & serve with wheat crackers.

Dried Beef Spread

1 cup chopped pecans
2 tablespoons butter
16 ounces cream cheese, softened
1 cup sour cream (8 oz)
1/2 teaspoon garlic powder
2 packages dried beef (2 1/2 oz each), chopped
4 teaspoons diced onion
crackers and breadsticks.

In a skillet, saute pecans in butter until golden; set aside.

In a mixing bowl, beat cream cheese until smooth. Add sour cream and garlic powder; mix well. Stir in beef and onion. Spread into a greased 8" square baking dish. Top with the pecans.

Bake, uncovered, at 350°F. for 20 minutes or until heated through.

Serve with crackers and breadsticks.

Yield: 3 1/2 cups.


Easy Ranch Cheese Ball

16 ounces Cream Cheese -- softened
1 package Ranch salad dressing mix
1 cup shredded cheddar cheese
Bacon Bits

Combine salad dressing,cheese and cream cheese. Form into a ball.

Roll in bacon bits. Refrigerate until 10 minutes before serving.

Serve with crackers.

Pineapple Cheese Ball

2 pkg. cream cheese, softened
1 pkg. dried ranch dressing mix (Hidden valley is the best!)
1 small can of crushed pineapple
2 stalks of green onion
1/4 cup of shredded cheese, Jack or Colby

Mix the package of ranch dressing mix with the softened cream cheese until well mixed.

Then add 1/2 can of crushed pineapple, (no juice), the 2 stalks of green onion chopped and the shredded cheese. Mix well and cool in the fridge for 20 minutes.

Turn out onto a cheese board or platter. Mound it in the center and shape into a ball with a spoon. If you like you can cover the ball with sliced almonds, sprinkle with dill weed, parsley or paprika.

Chill completely before serving.
