The phrase, “There’s more than meets the eye,” is used to express the idea that reality is more than what we see.
I believe God is letting us know that our physical eyesight is limited. That if we only consider the physical world in making our conclusion about the nature of things, we will often be wrong. God wants us to have spiritual eyesight, and see things by faith.
Many people do not believe in God because they can’t see Him. But “seeing” God is only done by faith that He is, and that He is a rewarder of those who please Him—like Abraham, the patriarch, did. We can “see” God by asking questions like you have here, and you will see Him in the things He has made, including quantum physics and the light spectrum.

He created all these for to explore Him and give Him the glory.
Many people explore for knowledge, but do not accept that He is the creator or deny Him as God the creator by saying this is science.
He is Omniscient.

We see the colors we needed to see in our evolutionary past. It would be very interesting to be able to perceive and interpret something like UV or IR radiation, though :-) I wonder what "redder than red" light WOULD look like?

There are no COLORS that the human eye can't see.
You are thinking of LIGHT. COLOR is just a term that we have come up with to describe the band of light we can see.
Again, there are NO hidden colors.
