Because the Church is considered holier than the ordinary world, people expect it to look different. That includes priestly garb. The typical priest "uniform" is black pants and a black shirt with a Roman style collar. More old-fashioned priests might wear a cassock. Essentially, it's a matter of how many centuries out of style one wants to look.
When we get into liturgical vestments, the style goes all the way back to the days of the Roman empire. These are versions of what people actually wore in the year 350. When they began to evangelize the barbarians in the further reaches of the empire, their converts were most impressed by their genteel Latin speech with its soft consonants and open vowels, and their elaborate Roman style of dress. So, while language and fashion moved on, priests continued to pray in Latin and continued to wear their outdated clothes, at least in church.
As for monks and friars robes, these are specific to the orders they represent. A Franciscan robe is brown, a Dominican robe may be white and a Jesuit likely won't wear a robe at all. Some robe styles may indicate a rank, but there is no standard, except in the upper hierarchy. Often, the more red there is in an outfit, the higher the prelate's rank. A monsigior may wear a red biretta. A bishop definitely does. And a cardinal is all about red. The pope most often wears white (although his shoes are red).
Opus Dei makes its own rules about what its members wear (and the movie takes liberties with this). I'm afraid you'll have to go by the characters' interactions to determine the pecking order.

Priests (fathers) wear Uniform to distinguish themselves from the ordinary mortals and appearing to be special mediators between humans and God through the authority of Church. All this is an outward show, it has got no divine sanction. The Uniform is hierarchial like Military Uniforms of a General at the highest order and a soldier at the lowest. The robes and Uniform of the POPE being the most ornate and elaborate like a General of the army. Both army and the Church being man made organizations have to be externally representative of authority in the heirarchy that is manifested in the Uniforms and stars and medals etc. There is NO other valid reason at all except a show of authority.

These robes that priests wear are part of the uniform that is required by the priest to have in order to perform the sacrament of the Eucharist. Also, these robes differ in color during the different seasons in the Christian calendar.

They wear the robes because it is what their tradition tells them to wear. It is not something that was set up in the Bible, but tradition that came about over centuries. Other traditions have other particular things they do.

The robes (aka vestments) that the priests wear when celebrating Mass resemble the typical attire of Romans back in Apostolic times as Christianity spread through the Roman Empire.
The Church decided to hold onto the tradition of clergymen wearing these vestments even as they were slipping into antiquity.
Over the centuries, the Church has "dressed" up these rather plain looking robes to better resemble the reverence due God and His Church.

God has always been very particular about the way his priests are adorned, and the way his holy places are decorated.
The precedent for this was in the old testament, when the Levitical Priesthood was established under Moses and Aaron, and when the vessels, and the design of the desert Tabernacle were specified.
