You dont' have to use the linguine in this... just stop before adding pasta to the skillet. YUMMY!


Linguine with Shrimp Scampi

Vegetable oil
Kosher salt
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.

Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

1 1/2 pounds large shrimp (about 16 to 24)
1/3 cup clarified butter
4 tablespoons minced garlic
6 green onions, thinly sliced
1/4 cup dry white wine
2 tablespoons lemon juice, fresh if possible
2 tablespoons chopped fresh parsley
salt and pepper, to taste

1 pound of any pasta, boil the pasta on salted water for 5 minutes.


Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side. Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.

2 Tbs extra virgin olive oil
3 large cloves garlic, crushed
2 Tbs shallots, diced fine
1/4 Cup dry white wine
2 tsp fresh lemon juice
1/2 Cup unsalted butter at room temperature
2 tsp finely chopped fresh Italian parsley
2 tsp finely chopped fresh tarragon
36 unpeeled shrimp
6-8 sprigs fresh thyme
salt and pepper

Heat the olive in a small pan over medium heat, add garlic and cook about 1 minute, until pale golden. Add shallots, season generously with salt and pepper, shaking the pan for about 2 minutes until the shallots are wilted. Add the wine and cook on high heat until it is reduced by half. Add the lemon juice and cook until most of the liquid is gone. Transfer to small bowl and allow to cool.

Mix the butter, tarragon & parsley together in a small bowl until blended. Place it on a sheet of plastic wrap and shape into a log and chill in refrigerator.

Heat the oven to 425 degrees F.

Peel and devein the shrimp, leave the tail on. Slice along the backs of the shrimp about 3/4 of the way through. Dry them off and arrange them on a buttered sheet pan by pushing the split part down with the tails upward. They should not be touching one another. Cut the butter into 1-1/4 inch pieces and scatter among the shrimp. Drizzle the reserved wine sauce over them, scatter the thyme sprigs. Season with salt and pepper and bake for about 5 minutes.

Transfer the shrimp to a serving plate.

Pour the pan juices into a saute pan and cook on high heat and bring to boil for 1 or 2 minutes until slightly thickened. Spoon the sauce over the shrimp and serve.

Shrimp Scampi
A simple but elegant shrimp dish. Combine it with garlic bread and a salad for a delicious dinner.

INGREDIENTS
1 (8 ounce) package angel hair pasta
1/2 cup butter
4 cloves minced garlic
1 pound shrimp, peeled and deveined
1 cup dry white wine
1/4 teaspoon ground black pepper
3/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley

DIRECTIONS
Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.
Stir in wine and pepper. Bring to a boil and cook for 30 seconds while stirring constantly.
Mix shrimp with drained pasta in a serving bowl. Sprinkle with cheese and parsley. Serve immediately.
