Baked, mashed or twice baked potatoes. Any green vegetable - beans, asparagus or broccoli come to mind. A nice salad. Mint jelly or mint sauce is always good with roast lamb, unless you've marinated it with things that would conflict with the mint.

EASY FAST and Delicious Broccoli and Rice

INGREDIENTS
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 (8 ounce) jar process cheese spread
1 cup uncooked instant rice
1/2 cup milk
1 dash pepper
1 (10 ounce) package frozen chopped broccoli
1/2 cup chopped onion
1/2 cup chopped celery
1 (2.8 ounce) can French-fried onions


DIRECTIONS
In a microwave-safe 2-qt. casserole, combine the soup, cheese spread, rice, milk and pepper. Microwave, uncovered, on high for 2-3 minutes or until cheese is melted.
Stir in broccoli, onion and celery. Microwave, uncovered, on high for 12-14 minutes, rotating a half-turn once.
Sprinkle onions over the top; microwave on high for 1 minute.

Make it just like a pot roast....potatoes, carrots,onions and lots of garlic. Make slits in leg of lamb and insert slices of garlic....as much as you like. A little rosemary,salt and pepper. Yummy makes me want lamb. ;-)

Mashed Parsnips...
You Make Mashed parsnips like you would make mashed potatoes...

Parsnips are very identical to carrots but there white... they taste creamy and kinda earthy i love them
