I have one that my mom taught me: Caprise.
Take a medium thick slice of mozzarella cheese, top with a tomato slice of the same thickness, drizzle with extra virgin olive oil, and sprinkle with a pinch of oregano, basil, salt and pepper. poke with a toothpick for easy serving.
Tip: go easy on the olive oil, or there will be a lot of dripping, and possibly a stain.

A tray of cut vegetables (you can buy celery and carrots pre-cut). I'd add cucumber spears, and green and yellow pepper strips. You have to cut them yourself but they are still pretty quick. You can buy pre-made Ranch dressing or get the packet and make it yourself. Quick, easy and generally very popular.
Another easy thing people usually really like is a tray of pepperoni slices and cut cheese, with crackers.
For something a little different, get a can of fat-free re-fried beans. Spread them on a plate, cover with loads of Colby-Jack cheese and heat until the beans are hot and the cheese is melted. Serve with Olive Oil And Rosemary flavored Triscuits, or Garlic flavored Triscuits.

1 tub sour cream
1 tub cream cheese
1 pkt frozen spinach
1 pkt spring vege soup mix
garlic (optional)
Damper loaf
defrost spinach and squeeze out excess water, add soup mix and mix through with garlic if required.
mix in separate bowl sour cream and cream cheese (i usually leave cream cheese out for approx 1/2 hour before making to soften it before mixing otherwise can go lumpy) until smooth
mix together and serve with veges, chips or scoop middle out of a damper loaf of bread and serve inside the bread with the excess bread used to "dip" with! I am from australia so hope you can find all these things if you are in USA - if you dont have spring vege soup mix you can use french onion soup mix - this is a really yummy dip - my friends always ask me to make it whenever we have a party!

WHITE CHILI
1 jar of Randal Northern Beans
1 16 oz of Salsa (med, mild or hot)
1 block of pepper jack cheese (shredded)
1 8 oz of Sour Cream
Sprinkle cumin and garlic powder over the top, mix it all up in a crock pot, serve w/scoop salsa chips. (After the cheese melts. Can also add more cheese for thickness-any kind)

Get some celery and cut into about 2" pieces. Fill with cream cheese and sprinkle on some sesame seeds, finely chopped nuts, chopped olives, crumbled bacon. Anything. They all taste good and everyone loves them.
Another really easy one is to take a ham steak and cut it into bite size cubes. Toss them in about 1/2 c. of brown sugar and mustard. Bake on 350 for about 1/2 hour. They will get brown and slightly crispy. Serve with cocktail toothpicks.
