Parmesan Artichoke Crostini Spread

3 oz. Soft cream cheese
½ cup grated Parmigiano Reggiano cheese
¼ cup sour cream
½ cup marinated artichoke hearts, drained and chopped
¼ cup sliced green or black olives
6 chopped pepperoncini salad peppers
1 Tbsp. Chopped parsley
1 tsp. Grated lemon peel
4 Tbsp. Extra virgin olive oil
1 baguette

In a bowl, mix cream cheese, parmigiano cheese, and sour cream. Stir in artichoke hearts, olive oil, pepperoncini, parsley and lemon peel.

Cut baguette into approx 20 slices. Brush olive oil on one side. Place in oven for 3-4 minutes or until golden brown.

Top toasted bread slices with spread and serve within 30 minutes

Bruschetta

Cooking spray
1 fat-free baguette
4 vine-ripened tomatoes
2 teaspoons finely chopped fresh garlic
1/4 cup chopped fresh basil leaves
Sea salt and freshly cracked black pepper to taste

Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet once with cooking spray.

Slice bread on the diagonal into slices 1/4 inch (0.6 cm) thick. Spread slices on baking sheet.

Bake 20 minutes, or until bread is golden brown. (The toasts can be stored in an airtight container for up to 1 month.)

Slice tomatoes in half. Squeeze out seeds and cut tomatoes into medium dice.

Spray a sauté pan once with cooking spray and place over medium heat. Add garlic and cook, stirring constantly with a rubber spatula, for 30 seconds.

Add tomatoes and cook, shaking the pan, for 2 to 3 minutes, just long enough to heat tomatoes. Stir in basil and remove from heat. Season with salt and pepper.

Top each toast with a generous tablespoonful of the tomato mixture.

Hope these help!

A simple garlic toast-

butter the french bread,
sprinkle with garlic butter.
sprinkle some Parmesan cheese on the bread

Place under broiler until golden brown.

OR:

spread a little tomato sauce on half of the french bread
sprinkle with mozzarella cheese

And no one's come with French Toast yet???

Cut the French Bread into about 1 1/2 thick slices and let them go stale, (there's a reason for this) or preheat an oven to 350F and when it comes to temp, turn it off and place the bread slices on a cookie sheet and into the oven to dry out

In a medium bowl, mix 4 eggs, 1/4 cup milk and what ever spices you like: cinnamon, nutmeg, ground ginger, ground cloves, etc........With a fork, combine all the ingredients (like you're making scrambled eggs)

Preheat a skillet over medium heat, and add butter to melt.....

Dip bread slices in egg mixture for about 5 seconds on each side.......place in buttered skillet and brown on both sides, checking to make sure that they're browning evenly......

Serve with butter, syrup or your favorite toppings......Enjoy!!
