also green onions are better than regular ones =]
first you boil the potatoes and eggs once they are done boiling let them cool and then cut them up.
once you mix those too you mix in as much mayo and sour cream as you like in it.
then chop other ingrediants together and mix.
then you have potatoe salad =] my family loves it

I make a cheater's potato salad. Buy a half gallon of already-made potato salad. Add 3 to 6 sliced hard-cooked eggs, half-cup of thinly sliced celery (as thin as you can cut it), and options are minced onions, black olives, even green olives, cherry tomatoes, etc. and enough mayonnaise to get the texture back to regular (about 1/2 cup). Garnish with parsley or lettuce leaves around the edge, sprinkle a little paprika for color.

POTATO SALAD. GREAT AMERICAN
1 cup Salad Dressing.
1 teaspoon mustard.
1/2 teaspoon celery seed.
1/2 teaspoon salt.
1/8 teaspoon pepper.
4 cups potatoes, cooked and cubed.
2 boiled eggs, chopped.
1/2 cup onion, chopped.
1/2 cup celery, sliced.
1/2 cup sweet pickle relish.
Combine salad dressing, mustard, celery seed, salt, and pepper; mix well.
Add potatoes, eggs, onion, celery, and pickle; mix lightly. Chill. Makes 6 servings.
You could just go with what you have luv. I would skip the celery seeds if you have falsies, and the pickle relish as that would colour it all yellow,.
The pickle relish would do as a side.
Cold ham or Turkey would also do as a side dish.

Dressing:
1 qt. Miracle Whip

1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)
Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.

That's all you need.
Peel and cut up and boil the potatoes till tender.
Peel and chop the onion.
Chop the celery.
Peel and chop up the eggs.
Cool the potatoes. Add the onion, celery, eggs.
Add the mayo and sour cream till it is as creamy as you like.
A little mustard powder or yellow mustard is good.
Mix it all gently and refrigerate.
That is how I make it and I love it.

Potatoes, eggs, celery, onion, mayo, mustard, salt and pepper. Boil the eggs and potatoes in separate pots, but at the same time. Have prepped and set aside : 5 to 6 large potatoes, peeled, diced into 1 inch squares and boiled till fork tender. Room temp or cold when mixing salad. Mix and match diff. types, russet, golden, red.... leave the skins on for more nutrients and texture. 5 to 6 hard boiled eggs, more or less depending on your liking. Let cool and then de-shell and dice the whole egg. I use 7 sometimes, cause i love the chewy whites. 1/2 to 3/4 cup of FINELY diced celery. remember to wash it with a towel to get the dirt off. Don't use leaves, unless you want a super celery taste, with less crunch. Tweak amount to your liking. 1/2 to 3/4 cup of FINELY diced onion, i prefer white, but use your favorite. Tweak amount to your liking. 1 1/2 to 2 cups of mayonnaise. I use Hellmann's. 2 to 4 tablespoons of mustard, spice, tangy, hot, regular, whatever flair you wish. Salt and Pepper. To assemble: Put your potatoes in the largest bowl you have, now add the eggs, celery, onions and 6 to 7 dashes of both salt and pepper. With two long handled spoons (or your hands) gently toss about 4 times to mix. Now add one cup of mayo and 2 tbsp of mustard right on top. (I'd use some spoons for this part!) Mix till partially coated, add more mayo, mustard, salt, and pepper until you achieve the desired coat and flavor. Put in smaller bowl(s), cover with 2 layers of plastic wrap and keep in fridge for 2 weeks. I have never tried to freeze it, because my family devours the whole batch within a week. But if you wish to, i suggest putting it in a zip top bag so its somewhat flat and freeze for a few months. Then defrost it on a platter in the fridge. I do this with pie fillings, so the mix freezes and defrosts evenly. I hope my family recipe is what you were looking for. Enjoy!

Let's see....sometimes I add shredded carrots. I use mayo and add a little mustard. (no sour cream) My family loves it.
It sounds like you have everything else you need, so boil the potatoes until soft, chop up the onion and celery, and slice the hardboiled egg for decoration on the top. Sprinkle paprika on top. Enjoy!
