It's only a 2 year program, no degree required. Why is this? I'd like to become one, but I'd like to have a degree..not just a certificate. I could always major in something, correct?

A dental assistant is far different than a dental hygienist. DHs don't get training on the job.

Different schools provide different degrees, and it is up to each occupational group to set the standards for their own levels of entry. There are dental hygiene certificate programs, but if you look you will also find associate degree programs. Here in this city there is a school which provides a bachelor of science degree in dental hygiene and you can also get a Master of Science in Dental Hygiene at the same school. They also have Bachelor of Science completion programs for dental hygienist who have attended other educational programs but wish to advance their education.

The same problem exist in nursing, where there are LVN/LPNs who receive a certificate, and RNs who can receive a non college diploma program, an associate degree from a community college or a bachelor of science from a 4 year college or university. Then RNs still go on for master and doctoral degrees.

As these occupations which fall in the range of emerging or semi-professions develop, they will have to determine what the one entry level to practice will be, but as there is a shortage in both fields, it is difficult to make a case that there is not a need for the graduates of the shorter programs if they can pass the licensing examinations.

Because you are only acting as a dental assistant not a dentist. In Texas, it is not required to have any certification to administer shots in a doctor's office. All you need is the doctor's order to do it.

If you want a degree, then you need to pursue a line of study that ends up with one.
