I have some very ripe bananas that I would normally use to make banana bread BUT my oven happens to be broken... I do not have an ice cream maker either, so banana ice cream is out..... Would you have any recipes that use bananas that does not require baking?? Thanks in advance!!!

banana pancakes

Ingredients for Banana Pancakes Recipe

* 2 large ripe bananas
* 1 cup flour
* 2 teaspoon baking powder
* 1/2 teaspoon salt
* 1/4 teaspoon cinnamon
* dash of grated nutmeg
* 1 Tbsp. sugar (or Splenda sweetener)
* 1 cup milk
* 2 eggs
* 1 Tbsp. vegetable oil (may be omitted)

Optional

* 2 additional bananas to slice and serve on top of the pancakes
* Maple syrup

Instructions

1. Mash 2 bananas and set aside.
2. Blend dry ingredients in a medium sized mixing bowl.
3. Add banana and wet ingredients to dry ingredients and blend until everything is moist. Batter will appear lumpy.
4. Use oil or pan spray to lightly coat a frying pan or griddle. Heat the griddle until a drop of water spattered on it sizzles.
5. Drop spoonfuls of banana pancake batter on the griddle and cook on each side until the pancakes are golden brown, but cooked through.

Note: your banana pancakes are usually ready to flip the first time when you see air bubbles rising in the pancake as it cooks.

Serve your banana pancakes with warm maple syrup and slices of fresh banana. You may also leave the nutmeg and cinnamon out of the batter and garnish with a sprinkling of cinnamon-nutmeg blended with sugar.

You don't have to have an ice cream maker to make ice cream. All you need is the ingredients in a tin can with a lid. A larger tin can that hold the smaller one and still close the lid that also has a little room to spare for a lot of ice and a little rock salt. Then you can go play kick the can for 20 minutes. Al alternative to this is to use a small metal trashcan and put the large coffee can inside the trash and have a barrell race. This is how my sister and I used to do it and it always came out nice and creamy. If you want it even more frozen you can add more ice and go at it again.
Smoothies are great with bananas (1 banana+1 cup mixed or single berry+1 cup plain yogurt+1 TBSP honey if desired. Add 1/8 cup silken tofu (can't taste it) for a nice protein smoothie.

Paula Deen from the foodnetwork.com had a show the other night called going bananas. If you go to that address and click on the Paula Deen, you can find a recipe for a morning breakfast casserole which uses bananas. You will also find a fried banana sandwich with peanut butter and bananas. Another one was bananas rolled in cumin and cornflake crumbs and then baked. go bananas!

it's not really a recipe, but you cut up some bananas, put them in a microwaveable bowl, then throw in some brown sugar and butter, then microwave for 1 minute. it is delish!
