Would it go bad if I chopped it up and put it in a sealed baggie in the fridge for about 3 - 4 hours until I needed to use it? WOuld it go bad?

Would it look bad? Like lose the color and start to brown?

Of course it's ok, It's called prep work. IF you are worried about color change, drizzle a little lemon juice over it. Foods change color when exposed to air. The acid in lemon juice slows this process down.

never put potato in the fridge as it will change the properties of the starch. Put it in cold water in the fridge--cover.

No they wont go bad, just cover with water to keep their color. I do this with white potatoes all the time

Good idea to get the food preparation out of the way early. I do it all the time. It wont go bad.

I can't see that it would, but I'd rather leave it in water in the fridge.

naw--I eat a LOT of things cold, anyway-- like chicken, or spaghetti, or pizza- and also I drink cold coffee( that started out hot)--weird, huh?
